Cost of Milk.
At the last meeting ot the New
England Holsteln Breeders' associa
tion one of the speakers asked the
question as to how many dairymen
present knew 'he cost of production
of a hundred pounds of milk. But
four hands were raised. And yet farm
ers ignorant as to what it costs them
to produce their milk output will com
plain that the milk dealers fix the
prices of the product. The dairy farm
er Is in the business of manufactur
ing milk. The manufacturer to bo suc
cessful must know not only what the
completed article costs but the
cost of every part. With this knowl
edge he can cut out the unprofitable
and keep that which is profitable. So
with the dairyman. He must know
what it costs to produce the milk
and then he must be ready to unite
with other dairymen in holding for a
price which will give a fair profit. But
until milk producers have a definite
knowledge what their product costs
them, they are in no condition to or
ganize or to hold together if they do
attempt organization.
Cutting The Feed.

States" the average yield of butter
per cow Is less than 150 pounds per
annum, when It Is possible, under
quite ordinary conditions, with grade
c ws of dairy breeds to produce dou
ble that amount, or three hundred

provement By proper selection, care,
feed and breeding of dairy cows, the
output of dairy products can bo

you may train a man to be a good

and practices, but to matte a real,
successful breeder of dairy cattlo ho
must have a natural love for his cat
tle and be able to see many of the
changes that are not visible to the
average person. The natural stock
breeders arc the ones to whom wo
must look for the fuller development
of our herds. It Is to theso mei that

Cream of Peas.
Blend together one largo to
tablespoon of butter and one of
flour. Add two cups of cold
milk. When mixed and smooth
add one can of peas. Season to
taste. Put a tablespoon of whip
ped cream In each plate. Serve
rclth toasted crackers.
Meat Baked Ham.
Select a nice slice of ham
and put in a shallow baking
dish and cover with milk and
bake In a moderate oven until
milk Is all boiled away and ham
is browned.
Vetetables Steamed Cabbage.
Cut cabbage same as for sau
erkraut. Add three slices fat
bacon cut up In small pieces.
Fry out until brown. Put cab
bage and bacon In frying pan,
add one-quarter cup vinegar,
cover with water, season with
salt and pepper to taste. Cov
er closely In frying pan and
steam moderately for two hours.
Desert Apple Fritters with
Sauce.
Sift together one and a third
cupful of flour, two tea3poonfuls
of baking powder and one
fourth teaspoonful of salt, a
grating of nutmeg, then beat
Into this two-thirds cupful of
milk and one egg. When a
smooth batter has been secured
add two sour apples, pared,
cored and cut into small pieces.
Drop by dessert spoonfuls Into
deep, smoking hot fat until a
golden brown, then berve with
a lemon or currant Jelly sauce.
