How to Make llcnn Soup.
Pour two qunrts of warm water over
a pint of beans and soak all night. In
| the niorniug drain and turn into a soup
kettle with a quarter of n pound of
sliced salt pork, a sliced onion and a
root of celery. Bring slowly to a boil
and simmer for six hours. Rub through
a coarse sieve, return the soup to the
kettle and season with salt, pepper and
a teaspoon fill of kitchen bouquet and
then thicken with a teaspoonful of
brown roux Put a handful of dice of
fine bread on the surface of the soup
after It is in the tureen.
