One Important item in curing meat
ot all kinda i to lay it out in a ol
place, where there is a good circula
tion of air, until the animal beat i
thoroughly cooled out.
There is a proccba of sugnr-curing
pork thru require that the salt, sugar
11 in! spices be rubbed in while the metit
ia atilt warm, but it requires experience
to do the work properly, and the av
eruge farmer cuu hardly ufford to run
the risk of failure.
Generally at this season there Is little
diflicuhy in thoroughly cooliug out
meat if it is spread out over night.
Meat should not be allowed to freee
before it is salted, us it will not lake
salt while froen. The salt is upt to
form in cakes over the meat, and un
less looked after when a few wurm
days come the meal will be certain to
spoil. In applying the sail the best
ran
the time to beuln. All catalmruex are free.

ATTENDING THE WOUNDED.
Modern Provlalona for Treatment of
Sufferers on the Field
of Battle,
Never have the arrangements for
dealing with the wounded been in so
thoroughly satisfactory a condition as
they are to-day, gays the Church Fam
ily Newspaper. During an engage
ment, and as the troop advance, the
wounded are sought out a quickly aa
may be possible, their wounds tem-
aiU u. -" ;turn lei.r-.sr
liy splinted and any other "first aid"
given that may be necessary. Eacb
soldier carries with him a small "first
aid" equipment In his tunic, so that he
.may bandage hlmtelf or temporarily
arrest bleeding, or give such help to a
wounded comrade. After "first aid" is
rendered the wounded are borne on
comfortable litters to the "dressing
places," which are sheltered spots a
short distance behind the line of bat
lie usually in the rear of the artillery.
Here they are examined by the sur
geons; hemorrhage is securely arreat-'
ed; bullets which can be easily aa
quickly removed ore taken nwoy; foiw
eign bodies and splinters of bone or
shell, if loose, are removed; limbs so
t-ecured as to render transport to the
field hospital easy and comfortable,
and anything else done which can be
done with ease and rapidity. No big
operation is done at these spots except
in the case of limbs so shattered as to
require immediate amputation. The
surgeons nt the "dressing places" do
only what is absolutely necessary, and
then the wounded are made comfort
able in specially constructed ambulance
wagons and transported to the field
hospital.

The liuilway Age has made a can
vass of the country in regard to the
building of new railroads during the
past year, and finds that about 4,500
miles have been added in that time.
This is the greatest amount of new rail
road that has been built in any one year
since 1890, when 5,670 miles were com
pleted. Scarcity of labor and the great
increase in prices for rails and other
supplies is believed to have had a mate
rial effect in keeping down tne new
mileage, and the coming year will with
out doubt sec continuation of building.
Iowa stands at the head of the list of
states in its figures for new mileage
with 585 miles to its credit, although
the previous ten years hnd seen little or
no additions made to its railroads. A
notable fact about the railroad build
ing of the year is that there hhs been
comparatively little building by new
companies, while n number of the older
roads have mode important extensions.
As exnmples, the Chicago A North
western has built 357', miles; the Chi
cago, Milwaukee St, Paul, 98 miles;
the Northern Pacific, 05 miles in the

This will cause i lie meal to take snlt
more renilily than if it is simply sprin
kled over it. After rubbing well lay the
meat in the box or on the shelf iirranged
for it and sprinkle it liberally with suli.
If the weather is moderate so that Uie
meat is not frozen it is best to go over
it u second time in a week or ten days,
rubbing as at first, ami then sprinkle
again. If the weather is cold euough
to keep the meal frozen this may be
done in a few days after the wuther
moderates.
When meal is pickled Instead of dry
salted the brine should be made as
strong as possible nnd should fully cov
er the meat. In three dnvs the brine
should be drawn off nnd either frekh
1 brine put on or the old brine be boiled
and the scum that rises to the surface
skimmed off and then when cool poured
back.
In both brine and dry salting the
addition of some sugar, saltpeter and
pepper will improve ihe quality of the
merit aa well as aiding in preserving it.
Allowing the meat to remain in salt
too long has a tendency to make the
lean part hard and unpalatable. When
ever sufficiently salted it should be
hung up mil smoked and then packed
down. If ill is is done before the warm
weather comes the risk of loss will bo
greatly lessened. St. Louts Republic.
