SHAW, GEORGE BROWN- 11. W. THOMAS, N. W. WALORON, MILTON Looms, C. L. SQUIRES oyster 3, Next month will bring us the ovsler, us it contains the letter "r" which seems to be closely associated with the little bi valve, warranting and defending us in the right to place it upon our bill-of-fire and eat it with relish comfort and impunity. The oyster has a history which if writ ten In detail would be as voluminous as a Legislative Record but not half so ' dry." The origin of its becoming an article of diet is lost in obscurity. Tradition says it was first eaten bv a party of ship wrecked Spiuish sailors cast away upon an island. Gloom surrounded them, star vation staring them when this little rough and uninviting specimen of wa or bir I with its wings closed up "put in an ap pearance" upon the Falling into their hands, they soon passed into their lank stomachs, affording them healthy nourishment and giving itself a place of distinction among the edible articles of the world. As to the correctness of the foregoing we cannot vouch. We write it as a calm imagination aided by tradition ary matter dictates. Of its late history we know more and shall dwell on that especially. For a long time it was a luxury, hardly enjoyed by the rich as an article of gen eral diet, while the poor could hardly ob tain it for sickness. lint "the world moves on" and so did the cause of the oyster. New beds were found, the de mand increased and it became an article of traffic and merchandise as well .as beef or pork, engaging the attention of capi talists and enlisting the services of both men and ships. It was within the pres ent century that it was found to be sus ceptible of cultivation as well a the crops of the Held. Accordingly men began to experiment and a trial proved the enter prise to be practical, successful and ic muuerative; thus adding subaqueous farming to tlie list of industries followed by mankind. We cannot go into a de tailed account of this unique farming. The grounds are bought and sold, poles indicating each man's line. The seed oysters are planted when no larger than a chestnut and raked after four years growth, yet they attain double that age but it is not profitable to keep them any longer. After raking follows the shuck ing, putting into cans, kegs, tubs and barrels and shipping, &e. As the result of the experiments and im provements made in the Oyster business generally, through the planting, raking, shucking, caning, etc., we linda great industry, employing thousands of men, hundreds of vessels, numerous factories and millions of eapitol, 100 000 pounds are annually sent to Europe—our Eastern coast along the Middle states producing the larges and best stock of the world. Steam power is now used for raking, but the hat.d system is pronounced the best for the good of t he bed. See the great strike of the 'Shockers" in Baltimore last winter, lrom 3000 to 4000 m- n were in the parade. These statements give some idea of the greatness ol' this industry, which keeps pace with all other branches of trade, the field hardly hav ing n limit, as the tinnier ous bays adopted to the propogation of this useful article are but little occupied j and the poles indicating the lines of those water farms, hardly noticed by a tourist when passing them. It is no longer a high toned dish in which the rich alone can revel, but the poor man working at moderate wages can indulged in an occasional stew, it costing no more than fresh beef or pork. But in conclusion we say, blest be the first man whether a Spanish sailor or a Gerinen negro, who had the courage and good sencc to swallow a juicy and harm less oyster, therby conferring upon man kind a right and blessing which for prac tical use and lasting value is among the formost inventions of the age, and should any of the descendants of this philan thropic inventor ever be found, we say g ve them a big international medal, iiuide of gold and resembling the oyster.
