"Is there any pure ice cream? Well,"
a New York confectioner said, "I claim
to make ice cream of pure material, but I
caunot afford to sell it at the price laid
down by the large manufacturers. They
charge a dollar a gallon. I charge .$1.50,
and, although I give my customers a pure
article for their money, I don't suppose
that I make nearly as much prolit out of a
gallon as the large firms make who sell it
fifty cents cheaper."
"Why?"
"The reason is plain enough. If you
will read this postal card it will give you
the key to the whole mystery."

DEAR SIR: We herewith send sample; please
trive it a fair trial. Vricc 50 cents per pound.

"This sample packet contained two
ounces of what was called gelatine, and is
said to make one and a half quarts of
crystalline jelly. In reality," the confec
tioner continued, "it is nothing more nor
less than a fair quantity of glue, which
can be bought at any drug store. The
cost is estimated at from 25 to 30 cents a
pound. It is not even gelatine, for gela
tine is usually sold in sheets. These two
ounces are sullicient to make two gallons
of ice cream. It is first melted in luke
warm milk and then poured into the
freezer to give the cream body. Nearly
all the large nanufacturers use it, and in
proportion to the amount of glue they put
in, the less cream they require. It is
quite easy to tell when ice cream is adul
terated. It has a puffy appearance some
what like Charlotte Uusse and if you
plunge a spoon into it you will almost
feel the air rush out. After eating it a
peculiar sensation is felt in the throat.
This arrises from two causes: First
from the gelatine, so called; and second
ly, from the adulterated flavoring that is
used. For instance, the Lemon flavor is
obtained from oil of lemons; the straw
berry flavor from concentrated strawber
ry, which in turn is made from ether;
the vanilla extract from alcohol,as it does
not pay to make it from the beans which
cost $lO per pound. That is how some
manufacturers get theii flavoring. Since
this refined glue has been introduced,corn
starch is used less extensively. It is not
uncommon for big dealers to put bone
dust in their sugar, so that you see there
is another item of adulteration."
"What does a quart of pure ice cream
cost?"
"A quart of pure cream costs 20 cents.
I can buy cream for 15 cents but it ain't
pure. Four fresli eggs cost eight cents,
a half pound white standard sugar Ave
cents, flavoring three cents. Total, 00
cents. This will give a little over a quart
and I generally put the actual cost of a
quart at 30 cents, or $1.20 gallon,
leaving a margin of 30 cents prolit. The
fact is, no wholesale manufacturer can
produce pure ice cream at $1 a gallon,and
therefore they have to put glue into it in
order to make a big profit on their sales.
No honest confectioner will object to let
his customers know what he puts into
his ice cream, and when he does you can
always make up your mind that there is
something wrong.
Mrs. Mary E. Nash, in refusing the
nomination of the Greenback party for
State Superintendent of Schools in lowa,
makes some very sensible and practical
remarks. She says : "I am a wife and
mother, and have a home to take care of
which occupies my entire time, and for
bids all thought of neglecting it for polit
ical honor, especially when the chance of
securing honor is as questionable as it is
in lowa outside the Republican party. I
have never appeared in public, and never
sought notoriey in any direction, believ
ing that if I make my home what it should
be my mission as a true woman .' will be
lilled. This being so, while I do not
question the kind intentions of the gen
tlemen,they certainly had no right to take
my name from my home and hold it up
for the State to read, and put me in the
role of an ofllce-seeker, and which by no
means belongs to me, and which under
110 circumstances would consent to ac
cept."
