In seven days. It was a beautiful rich yellow color, no coloring matter of any kind having been_ used, and the flavor was remarkable. On cut ting through it with a knife, it was com pletely solid—not the smallest trace be ing observable of either water or butter milk. It was j-inie butter, (the oil or fat ty flatter of milk,) and we can imagine no more wholesome or easily digested article of food, r . W l e have no doubt, also, that the dairymaid put it into shape in less lime than other butter, as ti e pecu liarity of Jersey cream is purity and freedom from ,casein and other milk con stituents. Her vertical milk mirror, also, is not up to the standard, and her hair not so soft and fine as some others. As, however, she milks 18 quarts per day in winter time, which yields 183 lbs. of butter in a week, any one would cheer fully sacrifice the points for . such solid returns. Rosa has made her mark, and will be a historical character, in future genealogies of the ehannelisland stoek.
