common stone jar, with salt in alterna e
layers—a layer of corn, say an i ineh
- thick—followed by a layer of_salt suf

soon rise, and all the corn 'must be kept
beneath the surface. Cloth •or paper
must next be tied over the mouth of the
jar, to keep out the dust—and that is all.
The corn will be too salt for the ,table,
as packed away, of course ; and if 'the
salt is soaked out in the ordinary way,
the 'corn'will, spoil, for the mil and
life'o the grain will go out wi th the
salt. Thesoaking should be commenced

boiling water.. This cooks the iniik - in
it at once, rendering\ it insoluble,l after
which it may be soaked as much as
