Are Potatoes Wholesome Food?

condemning virions articles of food as dan
gerous, to the direct question, "what shall I
cat. then?" he replied:' Why, de best way
is to eat noffin at all, and den you no epose
jerself." In regard to potatoes, there ia no
doubt that good, mealy potatoes, cooked
through, are aa healthful xa acy article of
food consumed. They abound in starch, and j
do net, alone, furnish muscle-making mate
rial enough. Tbey may be eaten more freely
in cold -weather when carbonaceous, or heat
producing food is most required; with a due
quantity of lean meat, bread, cabbage, and
other nitorogenous kinds of food, they are al
ways good. But to be easily digested, they
should always be baked or boiled dry, and
mashed. The mashing i? cot essential for
adults who have good molar teeth or grinders,
and who will take time in eating, to masticate
them well. Children, and, careless or rapid
eaters, are likely to swallow unmashed pota
toes ia small lumps. These lumps are dis
solved fclowly. and irritato the stomach, pro
ducing a dull, heavy feeling, if not absolute
pain. The fact that bit of potatoes are vom
ited whole, or passed off in the excrements,
when there is any irritation of the stomach or
bowels, is proof that euch lumps should never
go into the stomach.
Potatoes should not be mixed with butter
or gravies in mashing, as such a compound is
not earily dissolved by the gastric juice. A
better plan is to mash them dry, or with a
little milk, and let whatever salt and butter,
or gTavy, is used, be put upon the outside of
each mouthful. (This remark applies to all
kinds of food.) The butter, gravies, spices,
etc.; applied to food, are designed to come in
contact with the salivary glands, and promote
a flow of saliva, and this end ia better secured
by putting these tubatances upon the outside
of the food.
A dry, mealy potatoe, baked or boiled
through, and mashed finely eo that it would
dissolve in water stirred up with it, is just aa
good a food, for a sick person even, as boiled
rice. We repeat that sick or well persons,
young or old, should never swallow a piece of
potato larger than a small pea; and to ensure
this, we advise, as a general rule, to mash po
tatoes before bringing them to the table. e

Much has been published of late in our ag
ricultural journals, in relation to the alimen
tary properties of charcoal. It has been re
peatedly asserted, that domestic fowls rcay be
fattened on it without any other food, and
that too. in a shorter time than on the most
nutritive grains. I made an experiment, and
must say that the result surprised me. as I
had always been rather skeptical. Four tur
keys were confined ia a pen and fed on meal,
boiled potatoes and oats. Four others of the
same brood, were also at the same time con
fined in another pen, and fed daily on the
esme articles, but with one pint of finely pul
vcrized charcoal mixed with their meal and
potatoes. They also bad a plentiful supply
of broken chareoal in their pen. The eight
were killed on the same day, and there was a
difference of one and a half pounda each in
favor of the fowls which had been supplied
with the charcoal, they being much the fat
test, and the meat greatly superior in point
of tenderness and flavor. Cor. Ger. Tel.
Vegetable Oyster, or Salsify.
This excellent plant grows like a parsnip,
and is in flavor very much like fresh oysters.
Scrape them, and cut them round in thin
slips; boil them tender in milk and water,
season them well with pepper, butter and salt
make a nice toast, moistene 1 with the gravy
laid in the bottom of the dish, and pour the
whole over it. You can scarcely detect the
difference. There should be but a suitable
quantity of the gravy; too much lessens the
flavor. It is sometimes cut up and parboiled,
chopped fine and fried in batter. The roots
may be first cooked tender, then fried whole
in batter This is the very best mode in
which to cook this fine vegetable. We have
raised it constantly for a dozen years, but
never use it until about the end of October.

the carrot, to be used whenever the frost will

Working Butter Practical Suggestion.
After the butter is removed from the churn,
put water in tho working . bowl, to rinse off
the buttermilk. In another dish have cold
water and a liatn eloth free from lint. Wrins
the cloth out dry. spread the butter out with
ladle and press the cloth gently on the butter
and remove all the drops of moisture. Con
tcue this process until tho butter is ready for
salting keep the water clean for rinsing tho
cloth aften. Any ona trying this will be
surprised to find how much it facilitates the

have suddenly re-appeared in the busy world as
if just returned from a protracted travel in a
distant land. Some very gnal instances of tLis
kind are attested of female Sufferers, emaciated
victims of apparent marasmus, sanguineous ex
haustion, critical changes, and that complication
of nervous and dyspeptic aversion to air and
exercise for which the physician has no name.
In Nervous Affections of all kinds, and for
reasons familiar to Medical men, the operation
of this preparation of Iron must necessarily be
salutary, for, unlike the old oxides, it is vigor
ously tonic, without being exciting and over
heating, and gently, regularly aperient, even in
the most obstinate cases of costiveness without !
ever being a gastric purgative or inflicting a dis
agreeable seusation.
It is this latter property, among others which
makes it so remarkably effeetual and permanent
a remedy for Files, upon which it also appears
to exert a distinct and specific action, by dis
persing the local tcudeucy which forms them.
In Dyspepsia innumerable as are its causes,
a single box of these Chalybeate Pills has often
sufficed for the mo&t habitual cases, including
he attendant costiceness.
In unchecked Diarrhoea, even when advanced
to Dyseutary, confirmed emaciating and appa
rently maligneiit, the effects have been equally
lecisive and astonishing.
Ia the local pains, loss of flesh and strength.
debiliatiLg cough, and remittent hectic, winch
gecerady indicates Incipient Consumption, this
remedy has allayed the alarm of friends and
physicians, in several very gratifying and in
teresting instances.
In Scrofulous luberculsis, this mecicated iron

The attention of females cannot be too confi
dently invited to this remedy and restoraiict, in

pain and reducing the swellings and stifness of
the joints and muscles.
In Intermittent levers it must nocersardv be
a great remedy aud energetic rest rative, and its
progress in the new settlements of the rst
will probablv be one of high renown and use-
ulness.
No remedy has ever been discovered in the
whole his tory of medicine, which exerts such
prompt, happy and fully restorative effects.
