Pinching" a term often used in horti cultural literature, and is one of those tcch--.r.ls that. althou 'h well understood among t!ic initiated, has a very indefinite meaning to the general reader, at least in its horticultural application. Piuchiog is a mode of summer pruning whereby robust thjots are checked, ataa ear ly stage of their growth, by removing their extreme poiuts with a pinch between the thumb and finger; this retards, for a time, their extension, and induces growth in lower K 1- that would, in all nrbbability have rc- J -' - - " L uiaiued dormant. The great tendency to growth in healthy trees is towards the extreme points of bran ches, and the prevalent mode of winter pru ning, those of robust growth are put back more or less severely. This is done with a view to encourage side or lateral growths, but it is a very imperfect mode of gaining advan tages which are more reaiily secured by ju dicious, and timely care in summer. A nio- meuts reflecion will convince any one that it at best a negative practice to allow a tree to make a heavy growth of wood during sum mer and remove it with the pruning-koife ia winter, thus sacrificing and throwing away as what has been the great aim of the cultivation to produce. There are exceptions where win ter pruuiug will be absolutely a necessity; in young trees, for instance, it is evident that a healthy, vigorous aud extended sybtem of roots is of paramount importance. Sickly, or weak growing trees, will also be rendered more vigorous by cutting the branches well down in winter, but when the tree is well es tablished, it is perfectly practicable to main tain its productiveness, aud induce it to as sume any desired form by pinching during the season of active growth, and we hesitate not to assert, that the highest point in the culture and management of fruit trees Till not u have been reached, until this principle has be come fullv recognized and generally acted upon. Even in an economical point of view with reference to labor, it is obvioui that a saving will be gained by rubbing off a bud in J une instead of having to cut a branch in Decem ber. Indeed the amputating of large bran ches is altogether obliated, and the nutriment which would have been appropriated by such is absorbed by the branches retained. Trees vary so much iu their habits of growth and are so susceptible to the influences of soil aod climate, that no dcSota practical rules can be given even by the most expert, mai would form a safe guide to the novice in tree culture. It is a .matter of individual experi ence and observation; uo amount of cxplana tory information will convey more than the necessity for the rccognitioi of the general priuciple, aud that once firmly established in the miud, the theory thoroughly understood. the cultivator will readily acquire the discrim inating knowledge which always follows prac tical experience and close observation. One of the most common errors in sum mer pruning, and onevthat is also extremely injurious, is thai of the delaying the opera tion until growth had made considerable ad vance. and then in order to secure the emis sion of shoots at certain points a severe dim inution of active foliage is the consequence. We have seen grape vines thus treated, al lowed to proceed unchecked until the middle of July, and then a foot or more taken from the ecd of each shoot, that were completely paralyzed and the crop a total failure, the berries remaining green until overtaken by frost. It is such occurrences as the above that give rise to the many apparently conflicting statements that abound in our horticultural and agricultural literature. A course of prac tice is undertaken without a proper knowl edge of the system or the principles upon which it is founded, and when failures occur they are seldom attributed to their proper source. The perfection of summer pruning then, consists in checking the growth of particular shoots without diminishing the foliage; when the extreme- point of a branch is bruised, growth will be checked with the removal of leaves Nothing is more certain than this, that the welfare of the crop depends upon a full ciowth of healthy foliage. A lady of great experience in such matters gives the following receipt for pickling wal nuts: "Gather them dry, prick them through with a large pin two or three times, pat them into sail and water, shift them every three days for a fortnight, put them into a sieve. and, and let them stand a day in the air, and then put them into an earthen jar.
