u. ~~~~~~~~tti~~llo PICKLES. The trade in cucumber _pickles haS largely increased within the last four or five years, antris now a branch of busi ness of considerable importance. The demand having been created, it becomes the business of the gardener• and the farmer to supply it, and if cucumber growing be rightly•managed, it becomes a source of considerable revenue to those who embark in it extensively ; and it may be made one of the many incidental items that aggregate to quite a large sum with the generality of small farmers, for it is no difficult matter to put up a few barrels of pickles, for market, from a small garden patch of cucumbers. As many will doubtless do this, the present season, we wish to impress upon them the importance of picking their cucumbers when quite small, fin• upon this will almost entirely depend the re ceipt of a satisfactory price for them in market. We were told by a pickle dealer, a few days since, that he now know of a lot of three or four hundred barrels in this city that he could buy for the freight charges, but that be could not dispose of them. For the reason that the people in the C OM]. try have been in the habit of picking their cucumbers when so large, dealers in town can nardly be induced to 'look at them when sent in to t.he commission men Hence the latter are obliged to dispose of them " for a song," and the grower cannot understand why. when pickles are quoted so high. he can ob tain no more for his crop. The reason is simply that stated above. The pickles are too large. To be salable, the cucum ber should seldom exceed four inches in length—three inches is still better, and (something depending on Ore variety.) from. that down to two inches is still preferable. These smaller ones being fitted for putting up in glass. bring the best prices. It may at first seem to the inexperi enced that by picking when so small, the erop — will be greatly reduced but it is not so, for the vines will produce a vast ly larger number of small than of large cucumbers. There is extra work in picking, but this is much more ill balanced by the difference in price.
