together, until all the dirt front the sugar rises
to the top and ittslcitnnted otT. Then throw it
into a tub to cool, and when co'd, pour it over
your beef or pork to !mom in the usual time,
say four or five weeko. The meat must. be
well covered with pickle, and should not he
put, down for at. least Iwo days after killing,
during which time it. should he slightly sprin
kled with powdered saltpetre, which remove-3
all Lilo surface blood, &c., leaving the meat
frvh and clean.
Some omit boiling the pickle, and find it to
answer well; though the operation of boil
tug purifies the pickle by throwing oil the
dirt al toys to be found in salt and sugar.
