," When the grain of wheat is crushed
between the stones of the mill, and is
—then - sifted; it is separated into - Iwo' parts
and' the, flour._ The bran is
the-olitside, -bartler part of the . grain,
which does not crush so", readily, and
. when it does crush, darkens •the. color of
"the flour. It is therefore generally sif
:. ted out by .the„thillor, and is . used for feed
. ing horses, pigs, and other animals, or
even for applying to land as'a tuanure:
If Lisp four be Mixed with: a quantity
of water sufficient to moisten it-thorough
ly, the particles cohere and form a smooth,
. elastic and tenacious dough which admits
of being drawn out to some extent, and
. of being. moulded into a variety of fortes.
If this dough be placed -upon a sieve or
• oil a. piece of muslin, and worked with
, the hand under a stream Of•water, ne long

When the milk has become clear by
standing, a-white powder will be found
'Ftt the bottom of the'vessel r which is cow
, mon wheaten Stara. Thus the flour of
wheat contains two principal substances,
gluten and starch. Of the former ; every
100 lbs. of fine English flour ()Attain a
bout 10; and of the latter about 70- lbs.
" When a little yeast is added, to' the
flour before or while it is being mixed
with water into a :dough, and the dough
- is then placed for, an hour or two in a
warm atmosphere, it begins to rise—it
' fermerits,:that is, swellkor increases in
bulk. • Bubbles of (carbonic adid gas) are
disengaged in the interior of the dough
which is thereby rendered light and po
rous. If it be not put into a hot. oven,
• :the fermentation and swelling are at first
increased-by-the-hightirtempera bltt
when the ivlfeire:Via been heated nearly
to the temperature or. boiling water, the
fermentation is suddenly arrested; and
the. mass is fixed by the after baking in the
form it has then attained. The formation
of hard crusts on the loaf may be preven
ted by rubbing , a -little melted lard over it
after it is shaped; and before it is set down.

"New-baked bread possesses a peculiar
softness and tenacity which is familiar
with most people, and ihnugh — generilly
considered less digestible, Is - e favorite,
with many. After two or" three days)
it -loses its softness, becomes, free and
crumbly,' apparently drier,—ln common
language, the bread• becomes stale, or it
is stale bread'. It is generally supposed
that - this - change eases ' frour the -bread
. becoming actually drier by the gradual
loss of water; but this is not the ;case:
Stale bread contains almost • exactly the.'
same proportion .of water as new bread
after it has become completely cold.- '
The change is merely in the internal ar
rangement of the molecules of the bread.
A proof of this is, that if we put. tr stale
loaf into a closely covered tin, expose it
for half an hour or an hour to heat, not
exceeding that of boiling water, and then
remove the tin, and allow it• to cool, , the
loaf, when taken out, will be restored. in
ippearanco and properties to the state of
'new breed.

ton-of Fall Riser,. Mass., owns a cow, it
is stated, that has given dtiring . the past
year-4,704 quarts .01,miik, which is an
average of 13 19'365 . quaits•per day for
the entire year,. This milk was sold,ut
six cents per quart, and amounted to
8285 84. The original cost of the cow
was $74, and the cost of keeping $12445,
making $l9B 45, while the milk of one
year amounted to $B7 39 more than both
first cost, and feed. , • This is certainly a re
markable cow. •
