Our Receipt for Curing Meat.
To one gallon of water,
Take H lbs. of salt,
J lb. of sunar,
i oz. of saltpetre,
J oz of potash.
T. this "ratio tho picklo to be increased
to any 'quantity desired. .Let these be
boiled I together, until all the dirt from the
war rises to the top and 6 skimmed off.
Then throw it- into a tub to cool, and when
cold, pour it over your beef or pork, to
remain the usual time, say lour or live
weeks. The meat must be well covered
ivith nir!rli an d should not be put down
for at least two daya after killing, during
which time it should be slightly sprinkled
with powdered saltpetre, which removes
all the surface blood, &c., leavir.g the meat
fresh and clean. Some omit boiling the
pickle, and Cud it to answer well; thou-h
iunnrt;nn of boiling purifies tho picklo
by throwing off the dirt always to be found
io salt and sugar.
If this receipt is property tried, it will
never bo abandoned. There is none that
surpasses it, if so good. Germantotcn

Of the two kiudsoi tread, the rye and the
finest wheaten, made at the Vienna bakery
of tho Paris Exhibition, and served at the
adjoiainj: lager beer drinking hall, the
rye bread was largely taken in preference.
The case of a German is cited, who in his
own country used to cat a slice of wheaten
bread and a elico of rye bread together,
and who, on his eoiuing to reside in Eng
land, suffered much in health from the
entire use of wheaten bread.

culty is sometimes experienced in hand
ling a new rope, on account of its stiff
ness. This is especially tho case when it
is wanted for halters and cattle tics, xw
ery farmer is awaro bow inconvenient a
new stiff halter is to put on and tie up a
horse with; and new ropes tor tying cai
tle are irequently unsafe for the reason
ht thv aro not triable enough to knot
ecurcly. All this can be remedied, and
new rope made as limber and eoft at once
as after years' constatit use by simply boil
ing it for two hours in water. Then hang
it in a room, and let it dry out thoroughly.
It retains its stiffness until dry, when it
becomes perfectly pliable.
