AGRICULTURAL,
KEEPING. APPLES. IN WINTER.
At the last State Fair in tbia city, Delo3
- Pundall had on exhibition Russet Apples
grown a year ago. These apples were
" plump? fresh and of good flavor, quite as
- good as the ean:e kind of apples are ordi
narily on the approach of spring. TTe in-
' quired as to the manner of keeping, - and
were informed that the apples vrere put np
in the refuse boxes obtained at the groceries,
and in the following manner : A layer of
dry saw-dust was sprinkled at the bottom of
the box, and then a layer of apples placed
in it so that they did not touch each each
other. Upon these was placed a layer of
" paw-dust, and so on till the box was filled.
The boxes after being packed in ih'n way
were placed on the wall in the cellar, up
from the ground, where they, perfectly re
taining their freshness and flavor, until
brought out and exhibited at the Fair. He
says that ho has kept apples in thus way
some months later than the time named.
From experiments made with dry sand,
packing the apples in the same way, he Cuds
that saw-dust is much superior to the sand,
the latter he thinks being too heavy a ma-
, tcrial, and pressing the apples too much,
causing them to decay more rapidly than
with the saw-dust. The above experiment,
perhaps, may be suggestive to those desir
ing to preserve apples late in the teason of
next year.
It will be needless to remark, perhaps,
that no apple will keep late, by any process
of packing, that has been bruised or injured
in packing. Apples should be handled
carefully, and the less moving about, after
having been picked the better. A lan:c
part of the fruit grown and scld in market,
has been so injured by careless gathering,
pouring into barrels and rough handling
while being driven to market, that it soon
decays, under whatever treatment it hiay be

man, on the Eame subject, say3: "You
ask for the experience of others m reference
to picking apples. , 3Iy experience is that
apples should be kept in a dry building un
til quite cold weather ; then -very carefully
' packed over ace headed in an air-tikt bar
rel and remove to a cool cellar. They will
keep better than any other treatment I have
ever tried. A cellar for keeping fruit
should be well drained, but should not have
the bottom made of hydraulic cement.
Cement prevents evaporation, and as the
coolness of a cellar is caused by evaporation
mainly, it is important that nothing be done
to prevent this.
"CURING' MEATS.
"Massachusetts Hams" writes: "I cure
and smoke 50,000 to 100,000 pieces a year,
and know my business. Meat cored in
pickle made of water is not as good, and
only used because more pro5:able and less
laborious. The flavor of cured meats de
pends mainly upon the kind of molase
used. The best temperature is 40 deg.
frozen meat will not cure, and if above 50
deg. will be liable to taint For 100 lbs.
iacat, take 8 lbs. salt, I quart best molasses
or 2 lbs. sugar, lb. saltpetre, 2 ounces
ground alum ; mix and rub on the fleshy
6ide of the meat placed in pans, so as to
keep all the mixture ; repeat the rubbing
every three days, rubbing in thoroughly
For large pieces, and cold weather, sixty
days witi be required ; if mild weather, fifty
days, andv fifteen days less for small piejes.
The skin and fat of hams should be cut
clean from the face, as far down as the
second joint, to allow the salt to enter. The
.-recipe for keeping meat, viz: in ashes,
: given in September Agriculturalist is good.
Smoking is of no benefit ; it is only t quick
way of drying. Most people would prefer
drying without smoke. If you smoke, use
only walnut or yellow birch wood, or mahog
any saw-dust. Be sure your meat is well
cooled off before salting ; ten days after kil
ling is better than ten hours. Agriculturist.
Arruirx Management of Fruit Ok
CIIABD3. "When it is desirable to save the
r fruit of pear or apple trees without being
bruised, all the small stones, sticks, pieces
of brush, and every such thing that will in
jure the fruit should be removed from the
orchards early in September, to that a gooU
coat of grass may coter the ground before
the fruit is gathered in October. If a soft,
thick covering of grass is over the ground
'the fruit that falls will not be braised unless
it should strike alimb or fall on other fruit.
If the ground ha3 been plowed, or rooted
over by swine, let it be leveled off with har
rows and hoes, and if lumpy pass a heavy
roller over it Then sow a liberal dressing
of orchard grass seed, or timothy seed. If
it is not desirable to stock down an orchard
and a person has an abundance of straw of
any kind, let it be spread on the ground be
neath the fruit, so as to cover the entire sur
face, about two inches deep. Salt hay i
excellent for such a purpose. "When on a
visit to New Jersey, a short time since we
saw a large numberof fruit trees, and boughs
of which were bending beneath flic heavy
burden of fruit Salt hay had been spread
beneath the trees, so that none of the fruit
might fall on the hard ground. If that
precaution is not taken, the fruit which falls
to the ground will usually be badly bruised, i
Fattening Swine. Many farmers do'
not commence fattening their Ewinc till Oc
tober. This is not the best system of hog
management Hogs that are to be slaugh
tered about the 1st of next December or
January, should be well fed, with scrupulous
regularity, three times every day. It i3 net
best to "staff" fattening swine in theformer
part of the season, unless they have attained
a desirable size. Hogs should be kept grow
: ing rather than to allow them to subsist al
most entirely on grass, till within two months
of the time when they are to be slaughtered
and then crowd them by heavy feeding.
The quantity of feed should be increased
from week to week, as the animate will take
a larger amount Furthermore, it is infi
nitely Letter to have all kinds of grain ground
quite Cre before it is fed out. It is also an
excellent practice, when feeding fattening
swine, to provide three vessels, each one to
coatain about a3 much as is fed at one time.
Thea let the meal be softened by soaking
in water about twenty-four hour3 before it is
