We have on several occasion?, in this de
partment of the German toicn Tele ffraph,
urged upon our fanner3 the cultivation of a
more social dispositiona duty and a pleas
which haa always been more or Jess neglect
ed by them. ' Naturally the farmer is an un
selfish man. 'Ilia labors are mostly out of
doors. His calling takes him much abroad,
and enables him to mingle considerably with
the world. Yet looting at this and the very
large proportion of the population embraced
in hi3 pursuit, and the important influence
exercised by it over all our public afairs, it
is a subject of cVmir.oo remark, even by ag
riculturalists themselves, that their foeial
intercourse should be so much restricted.
There is no other cause for this seclusivc
ness on the part of farmers that we can see,
than the "treading in the footsteps of the'r
predecessors." Be this as it may, there are
other causes operating which appear to be
changing this for the better. County fairs,
bringing agriculturists together from districts
euSicicntly near to each other to make ac
quaintanceship pleasant and lasting, and put
ting them in friendly emulation in matters
and things involving their agrestic skill and
Buccess, are clearly working to form more
close companionships between those whose
domestic- comforts and family enjoyments
must be greatly promoted in the future.
Another cause operating to this end are
thanumerous charitable societies of women,
which sprung up all over the' loyal country
at the breaking out of the rebellion, for the
purpose of aiding the Nation's eick and
wounded eoldier?. Among the most effi
cient of these societies were to be found in
the agricultural districts ; and one of .heir
regulations we believe wa?, that their meet
ing were not strictly con Sped to the ladies,
but gentlemen often joined them, whose
presence, if it did not add much to the
amount of work, performed, had something
to do in making the time pass pleasantly,
and was almost indispensable in the matter
of waiting upon the ladio3 to their home?.
Little clubs among the farmers of a neigh
borhood, to meet once a week, or discuss or
talk over the innumerable iuljecta connect
ed with the intelligent prosecution of their
noble profession, produce a decidedly frater
nizing and socializing effect. While these
local associations should not be too formal
and restricted, they thouliL have an official
organization a better calculated to cause
punctuality at the meetings, aswella.3 to add
to their permanency. On these occasions
the wives and daughters of families thould
always accompany their husband, fathers or
brothers not to participate of course in the
proceedings that may take place, but to in
crease the agrceability of the meetings, and
to share in the pleasure of these delightful
interchanging of good neighborhood. In
deed, if the truth must be spoken and we
are ready to do it upon all occasion;?, espe
cially upon such an one as this there is very
little social enjoyment in the world which is
not refined and made doub!y enjoyable by the
presence of woman.
While we therefore urge upon our agri
culturists, as a rule, more social congeniality,
whether for the improvement of the soil or
mind, or the happy relaxtion of friendly in
tercourse, we are. gratified to find that cir
cumstances are tending to acconiilih what
we have so long wished to see inaugurated.

PUTTING DOWN BUTTER.
There is no peculiar art or my.-.tery about
putting down butter for winter use so that it
will keep sweet, sound and good a very I jug
time. It only needs a proper rcct p'.alle, to
know how, and scrupulous cleanliness and
all who make butter may easily enough have
a prime article cither for sale, or for winter
use, with very little trouble, and no extra
expense.
. The last time we went round Cape Horn,
wo bought in Baltimore a fc-'.v days before
sailing two tubs of ordinary Western butter
for cabin stores. It was cheap Ohio I utter,
tut happening to have been made right and
properly put down, it was capital butter all
the voyage outward bound, through the
tropic3, roun the Horn, doTn through the j
tropics again in the Pacific to Guayaquil,
two months in that oven, almost under the
Equator ; then homeward bound, through
the troj ical heat in two oceans, and at last
at the end of a year and ten days th i bottom
layer of the last tub came out for service cn
the day we made the Pelawarc Capes, as
sweet, fresh and sound as it was when we
went to sea outward Lound.
That butter had been correctly made and
put down in sweet, new red cak tub?, hold
ing about eighty pounds each, in this man
ner : The bottom of the tub covered with
fine, clean sa!t, half an inch thick. Thon a
solid layer of butter about 1 inches thick ;
then half an inch of salt again, and so alter
nately, salt and butter butter and salt, so!il,
to within two inches of the top of the tub,
that space being filled with strong brine, and
the head put in tight. During the entire
voyage care was. taken to keep the butter
covered with brine ; and whatever was taken
out for . ure wa3 simply rinsed off in sea
water.
Agrea deal of tha celebrated Orange
county or Goshen butter is not nearly up to
its reputation on account of being packed in
one solid mass from bottom to top, or in lay
ers of from three to five inch.93 in thickness,
without any salt strata between, or being
covered vr'.Vi pickle. Butter put down in
that manner will not keep good very long
with all the Goshen reputation ever got up
to back it. -
Of all the woods used for bntter tubs or
kegs, the red beech, common in several of
the northern counties of Pennsylvania and
in many pnrta of New York, is the best.
Then well seasoned redoak, then white elm,
then wbita ash. After these, all our woods
are more or less bad for butter, and ought
never o be used. Of course the very best
receptacle to put down butter ia for long
keeping Lj a strong, well glazed stone jar,
-svith a close-fitting coyer. But as ttuh vessels
sxe too fragile for th hard knocks of trans
portation, they are "only suitable for home
use. Beech, red oak or ash ought to be used
