Butter From Milk.
Many persons in mating batter think
they mast not eburn anything but pure
cream, and would rather lose some of the
cream in t-kiruminj; than to have any milk
get in with it.. I believe I can nuke Gfiy
pounds of butter more from one cow durin?
the season by churning all the ini'ik. In the

before half the cream is risen, tho atmos
phere being warm and sultry, and the
cream will often sour and taste Litter before
a churning is gathered. In cold weather
it will not rise, if we warm it (as many do)
we hurt the quality of the butter.
Many persons in setting milk, put about
two quarts in one pan, thinking the cream
will rise better. Think of the cream that
will adhere to the edges of a pan W skim
ming, and then the number you would have
in setting the milk of a large number
of cows. Drachms make ounces; ounces
make pounds. In churning the milk we
do away with the labor of settinr,skimming,
washing and scalding. The ex pence of
crooks or pans for a number of cows is cia
oiderable, I have cream crocks holding from four to
six gallons, easily handled. I strain one
churning in two or more, cool it,let it stand
until it commences to get sour, and then
put it in an upright churn that holds six
teen or twenty gallons ; test it with thcr
niometer ; if too cold put in warm water ;
if too warm, cold water, and churn it about
one hour at sixty four degrees Faheren
heit. The butter is always the same color,
unless the cream is frozen or scalded. I f
the pasture, water and other things arc the
same, I get the same amount of butter
each day, tho season through.
I use sheep power for turning. It is
simple, easily constructed, very durable ;
the whole cost will not exceed eight dol
lars. In the last manner referred to I have
mado from two commou cows during the
past two years, and five months of this year,
1,002 pounds of butter, exclusive of milk
and butter used in family, and raised one
calf each year on sweet milk. I have sold
to the amount of $325, and have over three
hundred pounds for sale now. I dou't claim
my cows to be extra milkers, but I dothvuk
that a penny saved is as good as a penny
earned. If our friends have a better way
that they can make more butter, and make
it easier, I should like to hear from them
through the Rural. Cor. Rural New
Yorker.
Salt and Lime.
.These two articles will, when mixed and
allowed to lay for a few months make an
excellent manure, which in its anrion will
much excel an equal amount of cither of its
original parts.
Air slaked lime should be thoroughly
mixed with common salt, in the proportion
of three of lime to two of salt by measure,
and kept well sheltered from the weather.
The mixture should be thorougly shovelled
over every two or three weeks ; the longer
ii is mixed before u-.'.ngthe better it will

time that should elapse between mixing
and using.
In Kiig'anJ the value of compound is
geuerally understood , and it is there used
in large amounts lor almost all.crops except
flax, to which it was found to be injurious,
by injuring the fiber, though it will mater
ially increase the yield of seed.
Now is the time to mix it for t he wheat
crop of next fall, in order that it may have
all possible time to produce the change
which takes place in its constituents the
salt and lime being decomposed, and two
new and valuable compounds are formed in
their place at least so our chemists tell us ;
any how, it is a first rate manure, and at the
same tiiuo not very expensive, and is easily
made on a small scale. Practical Farmer.
Indian Corn Vinegar. A correspon-.
of the Queeiishtniler, Australia, rives the
following directions for making vinegar from
IuJain corn : ' Steep abjut a quart of maize
in about five gallons of cold water for two
or three hours, and then put it on the fire
until the maize showssigns of bursting Do
not let it burst, but take it off the fire and
strain the liquor in to a cask, and addabout
two pounds of sugar to it. Set the cask in a
place where the sun can thine upon it, and
in three or four weeks it will be found to con
tain five gallons of vinegar. Loss quanti
ties can be made in the same way.
Oysters Frttter. A pint and a half of
milk, a poured an J a quarter of flour, four
eegs, tbe yolks of the eggs tuust be beaten
very thick, to which add the milk and flour,
stir the wholo well together ; whisk the
white to a stiff froth and mix them gradually
into the Latter ; take a spoonful of the mix
ture, drop an oyster into it, and fry it in
hot lard ; let them be a light brown on both
aides. The oysters should not be put into
the batter all at once as they would thin it.
Housekeepers will find the appearance
of old wall paper very much improved by
rubbing it with a woollen cloth dipped in
dry corn meal.- It removes all dust and
Smoke. Pieces of stale bread arc equally
efficacious.
