Hints on Horse Flesh.
As five year are required for the comple
tion of bone structure of the horse, it is im
portant that he be carefully used until that
age. If he is early overworked, the liga
ments which unite his oue hundred and thir-
ty bones are prevented from becoming suffi-

are necessary to a man. If harness is not
well fitted to the form, the veins are com-

ensues. When in motion, the horse rejtu-
hues his centre of gravity by using his nead
and neck. The check rein is therefore inhu
man and injurious.
If a home is compelled to run when his
head is held in a vertical position, the grav
ity ia thrown too tar back, and he advances
with difficulty. The ears may be called in
dices of a Lorse's mind. Intelligent hor
ses prick up their ears when ipoken to, vi
cious ones throw their ears back. A blind
horse directs one ear forward and one back
ward, and in a deaf horse the ears are with
out expression.
The ears of the best horses are short and
wide apart, the eyes are well open, and the
forehead broad. A broad forehead indicates
a rood brain. The Arab says : "The horse
breathes by his nose and not by his mouth ;

The Arab says, speaking of his horse,
"The first seven years are for my younger
brother, the next seven for myself, aod the
last for the enemy."
A horse has only one jugular vein, a man
has three. The withers can never be too
high. Tho higher they are the easier the
animal travels. The loins should be short,
tho chest square, and the shoulders well de
veloped. The veterinary surgeon who said,
"no foot, no horse," was perfectly correct.
The hoof is a curious and complicated piece
of mechanism; an elastic box, which ex- 1
pands and contracts as the horse raises or
puts down the foot. Shoeing should be
done with care and skill, or the natural form
of hoof is destroyed. Above all so noble
an animal should be treated with the great
est kindness, and no pains shouk1 be spared
to make his bonds as easy to wear as may be.
Thk Actual Vaixb of Cows. Now,
we can go into a dairying neighborhood, and
point to farmers who are losing from two to
three thousand dollars, by keeping cows
yielding two hundred pounds of butter per
year, instead of those that would jield from
five to six hundred pounds in the same time.
How many dairymen can tell the relative
value of each cow in his herd by actual test ?
There is a little instrument for this purpose
that don't cost much, but very few dairy
men know anything about it. It is called
"Lactometer," constructed, by placeing a
number of glass tubes, of equal length and
diameter, ia a wooden frame. The milk
from each cow is placed in one of these glass
tubes ; there thoy stand side by side, and
you can see the depth of cream that rises in
each, tube, representing a certain cow, and
estimating her value thereby. Stock Jour
nal. Dbt Hop Yeast. Tie three handfuls of
hoDs up in a thin cloth, with eight peeled
medium sized potatoes, boil those together
in three quarts of water; pour of the water,
after sufficient boiling.and scald three quarts
of flour with it ; mash the potatoes and stir
these with the scalding flour ; let it cool
and mix with one teacupful of good yeast
Let it stand cill it is light, well fermented ;
then mix sufficent corn meal with it to thick
en ; make into cakes and dry in the shade.
Spiced Ncts. One pint sugar house
molasses, halt pouod of butter, quarter
pound ginger, one ounce coriander 6eed, a
little powdeied cinnamon, a soiall portion
of cloves and allspice ; knead up as much
flour as will make them tolerably stiff.
Tar is an excellent application for hard,
dry, and cracked hoofs. It softens and pen
etrates the hoof, and gives it a bright, clean
appearanee ; it also closes the cracks. Once
used, the hostler will never bo without it.
Apply once or twice a week.
When a ton of wheat is marketed it leaves
nothing behind but five dollars worth of
straw. When a ton of meat is sold, it has
left behind it nine-tenths of the manura
value of the food consumed in making it
