Mince Pies. As the season for mince
pic making is approaching, the following in
structions in regard to making pie crust, will
prove acceptable to some of our lady readers
They are from a correspondent of thet'ouii
try Gentleman :
No matter how delicious and good the ma
terials, if the result is heavy, tough, greasy
crust, the material is worse than wasted.
Perhaps no form of food in common use
is more indigestible than the ordinary meth
od of preparing pie crust. If we will have
it, great care should be taken to make it as
nicely and delicately as possible.
A few things should be carefully observed
in its preparation. The lard or butter used
for shortening should be of the very best
quality. Salt should be freely used with
lard ; neither should ever be in the least de
gree melted. A cool room (if hot weather),
cool molding board, cool hands and water
are indispensable. A bowl of ice water to
dip the hands into, as well as to mix with,
is a great help. A marble board is best,
and a cellar or cool milk room to prepare
paste, if hot weather.
When the water is added, mix with a
spoon or knife, just sufficient to make all ad
here together, touch none with the hands
until ready to roll, then cut with a knife a
piece just large enough for the size of the
plate, knead .not at all, but touch lightly,
and roll but one way, never back and forth.
Experience will teach about the size neces
sary for one crust, and thus one will not be
necessitated to workover again bits, which
would form a tough, disagreeable crust.
Pieces, however, that are left, should always
be used, either for an under crust, or baked
for lunch crumbs.
A pint of flour, rightly managed, will make
two crusts, and a piece of shortening as
large as a goose egg will be sufficient. If
you desire it more flaky, without the trouble
of puff paste, spread soft butter or lard up
on the upper crust before sending to the
oven.
Get P-id of Undesirable Stock.
Farmers should be very careful in selecting
breeding animals of every kind. It is a
great mistake to waste provender on stock
of an inferior quality, which are not only far
from profitable, but unprofitable even after
consuming an amount of pasture or forage
that would "toll" on a better class of ani
mals. Old horses are a bad dependence
for the spring work. A thrifty farmer gen
erally manages to get rid of his horses before
they are past their labor, and fall on his
hands a dead loss. Old milch cows are not
fit for the dairy, they should be fattened or
sold as soon as they are no lougcr profitable
for milking or breeding purposes. Old ewes
produce light fleeces and small weak lambs
they are more liable to lose their wool by
brush and briars than young sheep, and they
do not winter well ; they should be culled
out of the flock and made fit for the butcher.
There i said to be carried off from the
soil nine pounds of lime in twenty bushels
of wheat, nine pounds in fifty bushels of
oats. and fifteen pounds in thirty-eight bush
els of barley. There are thirty -five pounds
of lime in two tons of clover, one hundred
and forty pounds in twenty-five tons of tur
nips, and two hundred and seventy pounds
in nine tons of potatoes. Some soils con
tain an abundance of lime for a thousand
years, while other soils require an occasion
al application of lime aa a fertilizer.
Buckwheat Cakes. To every three
bushel of buckwheat add one of good, heavy
oaU ; grind them together as though there
was only buckwheat; thus you will have
cakes always light and always brown, to pay
nothing ot thgreater digestibility and the
lightening ot spirits, which are equally cer-
taiu. i
