Burying Potatoes.
When a farmer has a dry piece of land
near his house, a small knoll or hill, and has
a large crop of potatoes, which he desires to
keep till spring, it is better to bury them
than to store them in his cellar, besides be
ing cheaper and easier in most cases. They
will keep pretty well when buried in any
manner, provided they be not exposed to
dampness and frost ; but the following is a
good one.
First dig the pit on soil that no rains will
settle in and wet the potatees. Four or five
feet deep will do, in an oblong shape. Then
as soon as the potatoes are thoroughly dried,
take the longest and best straw you have,
and line the sides. Then fill in with potatoes
and raise the heap as high as the potatoes
will lie. without spreading beyond the limits
of the pit, which will be ia the centre some
two feet above the level of the soil in a com
mon sized pit. Then cover with straw, the
butts resting on the ground, not in a manner
that would shed rain if not covered, when
they should be covered with earth, firmly
packed, and in a roof like shape, at least
eighteen inches or two feet deep on all sides.
On the top of the earth, then place a couple
of wile boards, nailed together in the form
of a roof, and we will warrant your potatoes
to come out in the following spring in the
best condition.
Mrs. J. Smith, of Saugerties, X. T.,
writes the following: "If any cf your lady
readers should wish for something for a des
sert when they have company unexpectedly
and are not prepared, the following' recipe
will be found excellent, and the dish whole
some and very quickly made : One pint of
milk and one pint of fiour.two eggs, a pinch
of salt, flavor with nutmeg bake in square
tin pans in a hot oven about half an hour,
as it is quickly made, and can be put in the
oven just before sitting down to the table,
and be just ready when wanted. Serve hot
with butter and sugar." Ex.
Live stock of all kinds require good feed
ing, for they lay on flesh and fat much more
readily in mildly warm weather better than
in cold, and when ! severe weather comes, it
is almost impossible to make cattle and
hogs hol l their own unless warmly sheltered.
Animals in good condition are easily main
tained so, unless exposed to great cold, for
they are already as if well blanketed. Hors
es and sheep bear vicissitudes of weather
better than other stock if they have enough
to eat, but if either is allowed to run down,
it is hard to get them up again.
Tomato Catsup. Boil one bushel of to
matoes until soft, then , squeeze 'them thro'
a fine wire seive ; add a half gallon of vine
gar, a pint and a half of salt7 two ounces of
doves, one quarter pound of allspice, one
ounce and a half of cayenne pepper, and
five heads of garlic, skinned and separated;
t mix and boil three hours, or until reduced
one-half, and bottle without straining.
We. have eaten excellent catsup made
from the above recipe. The garlic may be
omitted by those who do not desire its fla
vor, without injury.
Apple Jellt. Fall pippin apples are
decidedly the best for jelly. To one peck
of apples, after they are pared and quarter
ed, take three pints of water and the juice
of one lemon, with a very little lemon peel,
tew until soft, then pour into a jelly bag
and let drain; setiton the fire; takeoff
any scum that rises; let it boil twenty or
thirty minutes, trying occasionally with a
poon to see if it jellies. If ready t0 put ;D
glasses the syrup will drop thick.
