- White Specks in Bntter. '
A lady correspondent of the A". E. Funni
er says: "From ten years .experience in
batter makiDg, I come to the coucIumoq
that it ia neither strong current of air nor
ezoeaaif e heat that causes the white specks.
A strong current coming directly on the
trjtik will break the cream and prevent its
ruing. Heated air will make the cream
W3ft and oily. I am troubled about white
pecks only in warm weather. Warm
' damp air brings the white specks on the top
of cream. They do not originate in sour
milk at the bottom of the jar. They may
be see a by looking across the milk before
skimming. At least, this is my opinion.
My milk is set in a large, airy room, having
two large windows at the north, which are
taken oat during the summer ; two at the
west, and one at the sooth covered with a
veranda. The temperature of the room is
regulated by blinds which are opened at
night,' and for awhile in the morniug, and
closed during the day if the weather is
Warm. Our milk shelves are made by
placing four hard wood scantling, two inch
es and a half square, on two carpenter's
'horses,' which make a solid place for the
rows of pans, accessible on all sides, and of
a convenient height to strain and skim the
milk without moving or lifting. In this
way the air comes in contact with all the
milk in the room. During the past week of
extreme hot weather, no white specks have
appeared, and with the use of ice when
churning, which we think tends to prevent
the specks, good butter has been made.
Some pass the cream through a btraincr to
get out the specks. There is also now in
llse a cream grinder or condenser, that takes
them all out of the cream. We think it
best to make these during the warm sultry
weather of dog days. "
Mending Eoads.
On this important subject the Springfield
Republican says : "It ought to be made a I
statutory offence to put a shovcl-full of dirt
upon the highway alter the 1st of June, ex
cept where the ground has been viewed by
the County Commissioners, and the work
ordered for the public safety. In general,
aU the repairing that is done should be fin
ished three weeks earlier than that. The
true theory of road making is that the new
earth should be added in the spring, while
the frost is coming out of theground.so that
new and old shall settle down together for
the summer. When this is done, the addi
tion is incorporated bodily, and never heard
from afterwards. It is the only way in which
hard, firm roads can be obtained. On the
Mher hand, when, generally at present,
the repairing is put off till after harvesting,
we have bad roads all the fall, execrable
roads all winter, except where the ground is
deeply covered with snow ; and, come spring
the passage to and from even the nearest
localities, becomes a matter to be seriously
considered, well prepared for if inevitable,
or altogether avoided, if this can be done."
Frcit Raiseo Pcddinq. When baking
take two and a half cups of light dough, one
of sugar, hardly three fourths of a cup of
butter, two eggs, half a teaspoonfulof soda,
one glass of wine or branJy,cinuainon, cloves
and nutmeg, being careful not to let one
spice predominate, a half pound of washed
currants, the same of stoned raisins, and
a quarter of a pound of citron chopped
fine ; let it stand until light, in the pudding
dish; bake carefully so as not to form a
heavy crust ; turn it out when baked and
pour over it, when hot, a rich wine sauce ;
this will be found excellent. It must be
started very early in the morning. If home
made yeast is used, the dough can be saved
uutil the next day. Sweeten it with soda
before mixing in the other ingredients, and
allow it to rise again.
Sowing Clover. Sowing clover will no
doubt be the most expeditious and cheap
method of restoring worn out land in a fer
tile state, that can be employed. As a
manure it is worth three or four times as
much as that which is- commonly hauled
from barn yards. The roots of clover furn
ish as much fertilizing material as the top
growth. They are strong and penetrate to
a great depth, and mechanical condition of
the soil is much improved by their decay.
Some farmers turn under the crop when
fully grown say in June ; others take off
one crop and turn the second under ; others
take off two crops and ploiish under the sec
ond years growth. It affords almost the only
method of improving high ground, where
manure could not be hauled.
What Farmers Cannot Conceal. A
poor farmer cannot conceal the fact that he
ia a poor farmer. All his surroundings pro
claim the verdict against him ; his horses,
cattle, wagons, harness, plows, fences, fields,
even his wife and children bear silent but
Unmistakable evidence aeainst him. On the
other hand, all these things will testify fa
vorably on behalf of the good farmer. Every
passer by can read the evidence pro or con.
This fact, alone, ought to stimulate every
farmer to do his best, for the sake of his-ewn
character, as well as interest ; for he may
rest assured that every passer by will pro
nounce judgment according to the evidence.
PLANTisa Trek Seeds. All kinds of
hardy tree seed should go into the ground
while it is in a condition to work easily.
Chestnut, oak, hickory, maple and smaller
seeds may now .be sown. Pear and apple
seeds may also bo sown, although some pre
fer to keep them in sand till spring ; but
soil and climate differ, and the system fol
lowed may be varied to suit each. But let
all the work be lone this fall that can safely,
and thereby gain so much on another year.
For Boils. Make a plaster of molasses
and flour, or honey and flour, and apply it
as often as they get dry. If very painful,
make a soft poultice of bread and milk,
moistened with volatile liniment and lauda
num. This will ease pain, alia v infatuation.

cents worth of sal ammoniac, dissolve it in
a gill of soft water, wet the w :rts frequently
with the solution, when they will disappear
in a week or two.
