Storlyg roTATOES. Experience
ha proved to every potatoe raiser,tliat
the practice of digging theia np in the
morning, and leaving tLem on the
ground, exposed to the heat of the sun
daring the day, is a very injurious cne.
Though potatoes are provided with
yes, it ia better if they never gee the
light. Potatoes that have become heat
ed in the eun are exceedingly liable to
rot ; bnt even if they even escape this
their healthfulness and nutritive qual
ities are greatly impaired. In some
Bections of Ireland the custom prevails
of putting the potatoes into a t.overed
top immediately after being dug
The dryer the atmosphere is,, and
the colder provided it ia above the
freezing point the beter it will be for
keeping potatoes. If placed in eueh
an atmosphere, they will show no ten
dency to sprout or rot for years, nor
can they be distinguished from" fresh
dug potatoes. All changes of temper
ature or of the degree of moisture are
unfavorable to the keeping of potatoes.
Averygoodmethodof keeping them
in small quantities, as for family use,
is to assort them into barrels, fill the
interstices with sun dried san 1, and
then cover the tops of the barrels
with nicely fitted tufts. If kept in
this manner, they are not likely to be
come shriveled, and will retain the
freshness of recently dug potatoes till
late in the season after they are dug.
They will also show very little disposi
tion to sprout.
If farmers are not provided with
suitable cellars for storing potatoas,
then they are best preserved by ma
king heaps of them on the top of the
ground, and cover them over with straw
and earth. If this method 13 adopted
care should be taken to cut a sm ill
drain around the heap, through which
the surplus water miy pass ofT and to
provide a means of ventilating the
heap during the warm weather that
often occurs in the West, even during
the winter. For this purpose it is" well
to make a tube of boards, about six
inches square, which will reach from
the bottom of the heap, and which will
extend a foot or two above the outer
surface. The part placed beneath the
covering should be perforated with au
ger holes. The top should also be
closed by means of an end piece, thro
which should be a two inch hole, to be
closed at pleasure by the means of a
slide.
Farmers who live in the vicinity of a
Band bank, will probably find it will
pay to excavate a suitable space in it
for storing potatoes, and to secure it
frorn caving jn by means of a rude box.
In'some portions of New England, po
tatoes are stored in this way, even by
farmers who have good cellars. Prai

Making Saurkraut. As se-eral
ladies within the past two weeks have
desired us to republish our recipe for
making this jnuch esteemed dish bv
many persons, we herewith comply
with their request, in order that it may
be in time for this years crop of cab
bages. It is this :. In the first place
let your "staud," holding from a half
barrel to a barrel, be thoroughly scald
ed out ; the cutter, the tub and the
stamper also well scalded. Take off
all the outer leaves of the cebbacre.

clean leaves at the bottom of the stand,
sprinkle with a handful of salt, fill in a
half bushel of the cut cabbage, stamp
gently until the juice just begins to
make its appearance, then add another
handfull of salt, and so on until the
stand is full. Cover over with cabbage
leaves, place on top a clean board fit
ting the space pretty well, and on the
top of that a stone weighing twelve or
fifteen pounds. Stand away in a cool
place, and when hard freezing conies
on remove to the cellar. It will be
ready for ue in from four to six weeks.
The cabbage should be cut lolerablv
coarse. The savoy variety makes the
best article, but it is only half as pro
ductive as the Drumhead and Flat

Making Cider. Some farmers are
of the opinion that anything in the
shape of apples is good enough to make
cider, as that will work itstdf cloar in
the end. It is true cider can be made
of wormy, rotton and dirty apples, but
these conditions can hardly fail to af
fect its quality. If apples were se
lected with proper care and ground in
a clean state there is no doubt but the
cider would be much better than it
generally is. Some people grind the
apples and immediately put them in
the pomace to press. This is wrong
at least the cider will not be as finely
flavored as it would be were the pom
ace left in the vat half a day or more
before being put up in the cheese and
subject to pressure.
