We have recently met with an English work mestic Science, which contains some curious ments in relation to the system of brewing in thei try. It appears that the peculiarities attending the ferent kindi of beer produced in'England. are owing to the different substances, with which th er used by the brewers is impregnated, In one of the treaties ituldisbed by the Society for the diffusion of 'Useful Knowledge, it was asserted that gypsum and chalk were used in the manufacture of Burton ale. The bresiers of that place feeling them, selves personally aggrieved, if not injured in their bu. sinews by this charge, commenced an action in the Court of King's Bench for damages. Lcrd (then Mr) Brougham, who prepared the treatise, and defended the Society, sent an experienced chemist to Burton to analyze the water used. It was found, strange to say, that IL took its rise jh a gypsum rock. and the substan, core mentioned in the treaties were largely discovered in a state of nattnal sultition in the water used at the brewery. The suit was discontinued, and an expla, nation of the circumstance given in a ilote appended to the succeeding editions of the treatise. Donovan, the author of a valuable work on Domes. tic Economy, says that any sugar will ft anent as well a s that of malt, and that excellent ale can be made with it. The expense, however, is greater, The English brewers have some curious practices, Thus, when they store their ale in their sellers, they place a handful of hops at the bunghole of each barrel to exclude the atmospherick air, and thus pea, vent a change in the liquid. The regular drinkers used to mix their draughts—taking a tankard or a pint, containing half ale and half beer, or half ale and half two-penny. The tap sters, to make this tffixture had to draw from different banels, and it being someivbat tiresome, the brewers at their solicitation invented porter—containing all the qualities of the varieties above mentioned, and whinV theyintiled the entire. It being a favorite beverage with the porters, who perform much bard labor in that city, the name of porter was adopted for the new ill fluor. There are many things said shout the adulteration of beer and porter. No doubt there is something 'of this; but the remedy with the purchasers of the article is, to deal only with the fair and honest brewer. Since the temperance movement in this country. new kinds of drinks have been invented and have been greatly popular. The quantity of rot and spruce beer and of pop, consumed in this city, is enormous.-- , Large manufactories are numerous in the upper wards and wagons carrying round hundreds of bottles for dis tribution, may be seen in every part of the town, jn the early pertof the day. We are much surprised thnt the famous light beer of Germany is not manufactured here. It is of • des lightful flavor, has no intoxicating quality, and is very cheap. It is as pleasant to the taste in winter as Sum mer.
