TAKE SURPRISE SAMPLES OF MILK Much Interest Shown in Novel { Method of Testing Supply I For City Use Washington, D. C. Much inter-1 est on the part of both the milk pro- j ducer and the consumer in cities In the quality of the local milk supply ! can be aroused by the city milk con- j test, where "surprise" samples are j taken. Such a city milk contest was j first held in Baltimore, by the Dairy [ Division of the United States Depart- j ment of Agriculture, in 1911. It has i been adopted since in many other cities, especially on the Pacific Coast, j The city milk contest advertises those j dairies which obtain high scores as I to the quality of their milk, and re-j suits in the bettering of the supply j for the entire city. Frequently prizes are given by boards of trade or like | organizations to those dairymen who j win the highest scores in such con tests. The method of conducting such a j city milk contest as used in Green- j ville, S. C., is typical. Milk samples were collected in the streets from each dealer each month for a year. One dairy which delivered 100,0t>0 quarts of milk during the year was awarded an average score of 95. An other, which delivered 30.000 quarts, had an average score of 81. The women's club of the city presented the owner of each of these dairies with a loving cup in recognition of I the excellent quality of the milk fur nished to consumers. In that contest the grading of the j milk was determined by rr ?ans of the > milk scorecard. which allows 35 points j for bacteria. 25 for flavor and odor. ■ 10 for visible dirt, 10 for fat. 10 for j solids not fat. 5 for temperature, and j 5 for the appearance of bottle and cap —making a total of 100 points. Claßsify Dealer* In conducting a city milk contest, . dealers are classified according to the j kind of milk they handle, as certified, J raw, or pasteurized milk. Once each \ month for eleven months, or oftener i if desired, a pint of milk was col- 1 lected from the delivery wagon oil each dealer. The bacterial count, fat, I and solids not fat contents of each of j the samples was determined in the i laboratory. The temperature of the ) milk on the load was taken when the ! samples were collected. The twelfth ; month two pint bottles of milk were ! collected from the delivery wagon of | each dealer. One was analyzed for j bacterial count, fat and solids not ; fat; the other was scored for flavor i and odor and visible dirt. The quan- j tlty of visible dirt was determined by | passing the milk through a sediment tester, collecting the sediment on a cotton disc. In order to score .35 points in bac teria. the milk sample must contain under 500 bacteria per cubic centi meter. A competent judge scored the : sample for flavor and odor; 25 points; were awarded when . the flavor and odor were considered satisfactory. The sample of milk free from sedi ment received a score of 10. the cut depending on the quantity of sedi n;c-t present. Milk containing 4 per cent, or more of fat was given 10 j points, and samples containing less > were cut in proportion to their fat content. Samples containing S.T or | more of solids not fat received 10 | points and were cut when below that MQuantity. When the sample snowed temperature on the load was be- j low 50 degrees it was awarded nve ; points, and received a cut when above \ that temperature at time of collec tion. In order to obtain 5 points for bottle and cap the bottle must be clean, free from flaky glass, and "the mouth completely covered. To ascertain the figure taken to ( represent the quality of milk sup plied by each dealer the average bac- ! terial count of the year's sample' was ' determined. The average was given a number of points out of 35 whitfh such a count was allowed on the milk , scorecard. The fat and the solids not ' fat were likewise averaged. The flavor and odor score, sediment and bottle and cap scores given by the Judfce were added and likewise the temperature score. Tells How to Write to U. S. Troops Abroad Washington, July 12. lnstru ctions covering the conduct, of per sonal correspondence by mail or tel egraph between the United States and the American military forces in Kuropt- are now being prepared in the form of a bulletin bv the War Department, soon to be published. In substance the rules follow: j Mail addressed to members of the expeditionary forces should bear the comple ? designation of the division. [ regiment, company or other organi- | zatlon to which the addressee be longs. In the upper left-hand corner of a letter should be placed the usual form of return request and the name .and address of the sender. Under no circumstances should the location or station of a military organization be included in the ad dress on a letter for a person or or ganization in Europe. Postage should be fully prepaid. The letter mail rate to our military forces in France is two cents the ounce or fraction thereof. Newspa per mail is carried for one cent for four ounces. Letters, postcards and printed matter originating in the United States, or any of its possessions, for transmission to the United States expeditionary forces in Europe are subject to the United States domes tic classifications, conditions and rates of postage.
