of the importance of milk as human
food may be gained from the fact,
that about one-sixth of the total food
of the average family is furnished j
1 1 from milk and its products. Milk
j from various animals is used in all
' | parts of the w*orld, but with us that
' of the cow, so far surpasses all other
kinds in importance, that unless oth-
I ; erwlse specified, the word "milk" Is
| taken tq refer to cow's milk only.
I Few staple foods vary so much in
II composition, as milk. The average.
i good, unadulterated milk should con- 1
i tain about 87 per cent, water and 13
per cent, solids. About one-fourth of'
i these solids are furnished by the pro- j
! tein compounds, casein and albumen, i
1! The casein being five or six times more i
, abundant than the albumen. Fats j
(butter fat) form one-third of the |
total solids. Butter fat occurs in j
globules throughout the milk, and it
•! Is upon the size and number of them!
i that the creaminess of milk depends. I
I: The larger the globules the more eas- ;
■ ily and completely will they rise as :
i cream to the surface of the milk.
. j Carbohydrates make up 36 per cent.
, of the solids, by far the most impor
. tant of them being lactose, or milk
. sugar. The remaining five per cent. :
of solids consists of mineral matters,
the bulk of which are phosphates and
j chlorides of soda, potash and lime.
Besides these chemical constituents
milk almost inevitably contains bac-;
teria of many kinds and in varying ■
1 numbers. They cause the souring of |
I milk and the ripening of cream cheese
and they produce many other changes •
;In the appearance and flavor. The
I number present in freshly-drawli ,
milk varies enormously with the con
! ditions of milking. The Camp Curtin
Dairy is very particular regarding
I the quality of the milk sold by them. :

that her children are in any danger
of being inoculated with the germs of
disease, as all t;.eir milk is pure,
wholesome and sure to prove satis
