DIGESTION,
Digestion is Chiefly performed in the
stomach by tho aid of a fluid which freely
exudes from the inner coat of that organ,
when in a state ol health, called the Gastric
Juice. This fluid is the Great solvent of the
Food, the Purifying, Preserving, and Stimula
ting Agent of the stomach and intenstineß.
Without it there will be no digestion,—no
conversion of food into blood, and no nu
trition bf the body; but rather a foul, torpid,
painful, and destructive condition of the
whole digestive apparatus. A wealt, half
dead, or injured stomach produces 110 good
Gastric Juice, and hence the disease, dis
tress and debility which ensue.
Pepsin and KenNTt.—- Pepsin is (he chief
element, or great Digesting Principle ot the
Gastric Juice. It is found 'a great abun
dance 111 the solid parts of tho hi'mar. stom
ach after deilh, and sometimes causes the
stomach to digest itself, or eat i'seii up. It
is also found in the stomach of animals, s 5
the ox, call', &c. It is the material used Ly
farmers in making cheese, called Rennet,
the effect of which has long been the spe
cial wonder of the dairy. The curdling of
rnilk is the first process of digestion. Ren- |
net possesses astotiishi' g power. The stom- 1
ach of a calf will curdle nearly one thou- !
sand liinus its own weight ol'milk. Baron
Liebig states that, 'One part of Pepsin dis
solved in sixty thousand parts of water, will
digest meal and other food." Diseased
stomachs produce no good Gastric Joice
Rennet or Pepsin. To show that this want
may be perfectly supplied, we quo'.e the
following
SCIENTIFIC EVIDENCE!
BARON LIEBIG, in Lis celebrated work on
Animal Chemistry, says: "An Artificial Di
gestive Fluid analogous to the Gastric Juice, j
may be readily prepared from the nucoiis
membrane of the stomach of the Call, in |
which various articles of food, as meal and
eggsj will be softened, changed, and diges
l"d, just in the same mannes-ae-they would
be in the human stomach,"
Dr. Pereira, in his famous treatise on
"Food and Diet," published by Fowlers &
Wells, Now York, page 35. states the same
great fact, and describes the method of prep
aration. There are few higher authorities
than Dr. Pereira.
Dr Combe, in his valuable writings on
the "Physiology of Digestion," observes
that "a diminution of the due quantity of
the Gastric Juice is a prominent and all pre
vailing cause of Dyspepsia;" and he states i
that "a distinguished orofessor of medicine
in London, who was severely afflicted with ,
this complaint finding cvijry thing else to I
fail, had recourse to the Gastric Juice, ob- I
tained from the stomach of living animals, j
which proved completely successful."
Dr. Graham, author ot the famous works :
ou "Vegetable Diet," says : "it is a fernar- j
kablu fact in physiology, that (lid stomachs
of animals, macerated in water, itripart to |
the Huid the properly of dissolving various i
articles of food, and of effecting a kind of !
artificial digestion of them in no wise dif- j
ferent from the natural digestive process." j
Dr. Simon's great work, the "Chemistry
of Man," (Lea & Blanchnrd, Phila., 1846, j
pp. 321-2): "The discovery of PEPSIN j
to ms a new era in ihe chemical history of!
Di gestion. From recent experiments we ]
know that food is dissolved as rapidly in an j
artificial digestive fluid, prepared from Pep- j
sin, as it is in the natural Gastric Juice it
self."
Professor Dnnglisoii of the Jefferson Col- j
lege, Philadelphia, in his great work oil Hit- j
man Physiology, devotes more than fifty I
pages to an examination of this subject. J
His experiments with Dr Beaumont, ou the I
Gastric Juice, obtained from the living hi.- !
man stomach and from aatisals are well 1
known. "In all cases,'' ho "digestion 1
occurred as perfectly in the artificial as the :
natural digestions."
