' HOW TO KEEP BEEP.
In response to an inquiry for practical
directions how to ouro beef, so that it will
keep until June, and yet not too salt for
tho tablo.jW. B. Dryer, Douglass Co., III.,
writes to tho American Agriculturist:
For every 100 pounds of beef, use seven
pounds of salt, well rubbed on. Allow tho
beef to stand in tho salt for twenty-four
hours ; tako it from tho vessel and pour off
tho drippings ; then pack closely, and cov
er with brine, made as follows : For cvo
ry 100 pounds of beef, -4 ounces of Saltpo
ter, 4 ounces of Bicarbonato Soda, 1 qt.

then take out tho meat, throw away the
brine, rinse out the barrel, and repack tho
moat snugly. Malro a quantity of brine
sufficient to cover the meet, and strong
enough to bear an egg. Add 2 ounces of
saitpoter for every 100 pounds of meat,
pour it on tho meat, and it will keep until
hot weather.
A subscriber in Green co., III., writes :
To 8 gallons of rain water, add 2 pounds
of brown sugar, 1 quart of molasses,-4 oz.
of saltpetor, and enough of common salt to
make brine strong enough to float an egg.

prepared brine, and put on it a sufficient
weight to keep the beef covered with tho
pickle. Eaoh of tho above contributors
says, that tho method rcccommended has
been tried by him several years, and the
result was overy way satisfactory. Where
a considerable quantity ol beef is to bo
cured, it might bo well to try all the above
ways on different parcels ; wo should like
to hear which produces the best article

PICKLED PORK EQUAL TO FRESH.
A lady contributor at Perry, 111., sends
the following directions to tho American
Auricuhurisl : j'Lct tho meat cool thor
oughly, cut it into pieces 4 to C inches
wide, weigh them and pack as tight as
possiblo in tho barrel, salting ery tightly.
Cover the meat with brino made as strong
as possiblo. Pour off a gallon of the brino
and mix with it ono tablo spoonful of salt
peter for ovory hundred pounds of meat
and return it to the barrel. Let it stanri
ono month, then take out the moat, let it
drain twelve hours. Put the brino in an
iron kettle, add ono quurt of molases, or
two lbs. of sugar, and boil until peifectly
dear. When it is cold, return the meat
to the barrel, and pour on tho brine.
Weight it down, and keep it covered close,
and you will have tho sweetest meat you
ever tasted."
