From want of skill or of care in prepar
iti(; it for matket, the prices usually real
ized arc far less than might bo obtained.
It is vray unsatisfactory to producers to
read in tho published price list, ''batter
23 to 27 cents per lb," and then liavo only
1G to 20 cents ofieud in goods at tho ftoro ;
and they caunct credit tho etatctnciit of
the merchant that he can only get that fig
ure for what ho sends to tho city. Yet
such is often tho case, and for seasons
which might be obviated, some of which
aro indicated in tho following sugges
tions :
It is unjust as wdlas bad policy to pay
a uniform pnice for all butter brought in,
as is customary with many dealers. No
doubt it is not pleasant to tell a customer
that his or her butler is worth less than
some neighbor's, but if the same price be
paid for all, it is iu effect offering a premi
um on carelessness, and only a second rate
article need bo expected. It is essential
that butter should be of uniform quality
and coloa, To this end it should bo sort
ed as received, and "hat of similar charact
er packed together. Most of it will need
working over to take ou.t the buttermilk,
which iu ''stoic butter'' is ugually from
two to three per rent in weight It should
be put in the tubs or fiikins at once, as
coon as worked ; and if there bo not
enough to Gil the package, the top laper
fhould be covered with a strong brine
When tho package is full, tho top should
bo made even and smooth, a clean piece of
muslin, dipped io brine, be laid over it, and
salt sprinkled on top o( tho cloth. The
head of the firkin should not touch the
butter. Tho actual weight of tho firkin
when empty should be plainly marked on
the head two pounds additional taro is
allowed in th:s market for what the keg
will soak. Nothing is gained ultimately
by marking a false taro; the deception is
euro to be discovered in time, and the dis
honest party looses credit thereafter. The
kind of vessel in which to forward butter
to market, depends considerably upon
distance from the city, nnd the time of
year. Early in the seacon, for fresh but
ter intended for immcdiato use, or from
Ecctions near market, the half-firkin tub
(the same as a firkin sawed in two,) is gen
erully preferred. Under other circum
stances, kegs holding about 1 00 lbs arc
best, and indeed thoc arc almost always
saleable. For shipping abroad, or for
keeping any length of timo, nono oibers
will answer. Tho best size and shape
are, 22 inches high, 1G inches diameter of
bilagc,and 12 inches diameter of Lead,
outside measurement j will mako of white
oak, with smooth, round hickory hoops;
tho flat hoof ad firkins of ash aro not liked.
No hole should be bored, nor plug put in
the head or bottom. The firkins or tubs
should bo thoroughly soaked iu brine, and
the sides and bottom rubbed nith fine dai
ry salt. Those who aro receiving any
considerable quantity of butter,should have
a cool well ventilated cellar in which to
store it while awaiting a market. No
fish, onions, or other Btrong flavored arti
cles must bo kept near it, as butter very
soon absordi any rank effluvia, and its
quality is injured,
It is geeerallo found moil profitable to
send butter for regularly through tho sea
bod, whilo it is fresh and sweet. This,
however, will depend upon tho rates of the
price current. Western butler is the prin
cipal supply for shipment during tho warm
months, and it usually brings better prices
then, than if held back uutil cold weather,
when better grades aro in market and
Western is not so much sought after. In
tho Winter, ntoro butter ordinarely sells
at higher fignres in the original rolls,with
a olean piece of muilin wrapped around
each, and nicely paekco in barrel.
