A correspondent, says the country Gen try Gentleman, who has tried the plan of drying peaches without pealing, mention ed below, to his great satisfaction, rcque-ts as to republish it for tho benefit of our readers : The furze is removed by immersing in lyo, made by boiling wood ashes in water in a tolerable strength. Tho lye should be warm, but not bo as to cook the peach which are rubbed in it awhile, and then washed in clear cold water, livery par ticle of furze will bo removed, and only a thin skin jemain they can then bo cut and dried in the usual manner. They thus loso nothing of their sweetness by peeling, and are said to bo of tho best of quaility for all cooking purposes. A BREAD AND BUTTER PUDDING.
