RAISING. TUllKEYS.
Why is it that at least three out of four
farmers do not succeed in raising turkey ?
With all other poultry tlioy nro successful,
but turkeys are nbntuloncd by most farm
ers as too -uncertain and troublesome to
bother with. Noav this is nil wrong for
onco a person gels a knack of raising theso
lino fowls, thw can raise just as manv as
they ptea&c. So far ns I am concerned, I
generally raise moro turkeys than I know
vfhat lo do with, and I have turkoys now
left over from last year, that will bo eaten
as wo want them. Last winter wo fairly
rcvollfd in roast turkey gavo quito a
nuuibor away sold others, have some, be
side tho breeders, still left. My plan of
ruising 13 simple, and I will give it in as
few words aa possible : First, I ncvor al
low a turkoy to set until about tho middle
of May. They will commence to lay early
in April, but I take tlie.se eggs away as
fast as laid, and keep them until they lay
their second batch, which will bo finished
about tho second or third week iu May. I
then gave Lor some eighteen or twenty
eggs, and let her set. Along about tho
iniddlo of Juno she will bo off. I then
take her, put her with her young on an
old barn floor, or other out-building that
is dry, and feed on curd and cracked corn.
Curd is tho best for a continual feed, when
tlo farmer has plenty; but cracked corn
or coarse meal, mixed with lobbcred milk,
will answer about cqua'ly as well. After
thoy havo been in doors for two or three
days, or long enough to get fairly on their
logs for tho turkey is the weakest of nl
fowls when young I let them out, pro
viding tho weather is fine, and thero is
no dew on tho grass. The great reason
why peoplo cannot, or do not, raise tur
keys, is because they turn them out ua
soon hatched, and about tho first wetting
thoy get thoy keel over and die. To suc
ceed in railing turkeys, therefore, you
must keep them dry until at least ten weeks
old, when they will stand as much water
as other fowls geeso and ducks accepted.
Of course, thoy must be driven in every
night, and on all occasions when a storm
is threatening. Tho reader will at onco
perceive thero is caroin all this, but when
tfeur.nksgiviug and Christmas comes to
say nothing of all tho Sunday roarts dur
ing tho winter, our caro is lost in enjoy
ment, and we come to tho conclusion that
''turlroys are worth raiding."

PRESERVING FRUIT.
Prof. Mapes Bays: ."If tomatoes arc
slightly scalded and skinned, and put into
bottles and these set into boiling water
for a few minutes, aud corked and scaled,
the fruit will keep as long as dceircd, and
if eaten when first opened, will have the
samo taste a when lirtt picked from tho
vines."
Our experience is this : Wc pick our
tomatoes, wash and peql: tlieii boil slight
ly and stir for fivG or ten minutes, so as to
to sure to oxpcl all tho air ; then heat tho
bottles and fill, corkinir up instantly. If
not corked up at once, and when full, tho
contents will settle, and lcavo a vacant
space. Tho cork should bo a short one,
and pushed down betow the level of tho
top of the bottle ncek this filled up with
molted scaling wax. This is our modo,
We have never lost a bottle, nor had tho
least change taken place in tho fruit. We
havo kept it and generally do a year,
or a year and a half, always with perfect
success. We havo now a quart bottlo
fiilled, which wo shall not break till next
summer, when it will be two years old.
We have no thought at all of its spoiling.
Oyster cans arc equally good, only there
will be a tin taste not agreeable.
In this process tho heat drives out the
air, and the glass kcops it out. This pre
serves tho fruit. II ut there is some fruit
that will not preserve, on account of the
fixed air in it. Plums are of this nature.
Pears, on the other baud, are readily
preserved.
Thero is anothor way to prcsorvo fruit,
tho air pump. Pump out tha air, and
your fruit is safe, regardless of tho vacu
urn in the vessel. Fruit may bo preserved
with or without sugar; but it should nev
er bo boiled with sugar. Iioil first, then
apply tho sugar ; or, boat your syrup, and
pour over your fruit. This leaves the
tasto of the fruit distinct. Ono thing
more ; use only tho purest and best refin
ed sugar sugar without taste, for what
ever odor or flavor thero is, goes into tho
fruit, and will bo tailed.

happy. Rut should one thing go wrong,
that is quite enough to make ad misscrable ;
and, although the joys of ibis world arc
vaiu and bhort yet its sorrows are real and
