HOW TO MAKE MAPLE SUGAR.
Tho following timely article is from tho
pen of ono wlio nianulacturos maply im
gar largely in Now Hampshire, and is
addressed to tho Journal of Agriculture
in that atcto t
Wo have boon in the practico of mak
ing annually, in our sugar establishment
from 2,500 to 0,000 pounds of maple
sugar j and whoa tvo could obtain from
two to four cunt3 per pound more than
the cost nf the best loaf and granulated
sugars, wo have Bomctimcs sold ourselves
so 3hort as to buy for home uso a barrel
or two of the best grauulatcd sugar.
Much depends, hovuvor,upon the uiauner
in which maple sugar is made. Wo make
our sugar in this wa:
Our buckets and holders are all thor
oughly scalded and rinsed previous to
sotting. Our evaporating pan, of which
wo use eight, are scraped, washed, and
made perfectly cluan before use. We
then endeavor to gather and evaporate tho
snp as speedily as possible after it has left
the trees, to a cousutoncy a-littlo thinner
than molasses.
It is then strained aud set aside until
wo are ready to sugar it off. When we
commence this process, to syrup enough
to make forty pounds of sugar we add one
pint of milk and ono or two eggs, well
beaten a".d mixed together. Place the
tyrup over the Gro, and when the scum
rises skim it off into a vessel for further
use. After the skimming is through
remove the sirup from the fire and strain
it through flannel to remove all little curds,
which, if suffered to remain, would not
only injure the quality, but, by settling to
tho bottom, would endanger burning.
Now wo wash our evaporating pan, return
the syrup, and place it over a brisk fire,
aud evaporate as quickly as possible to the
groper consistency. If it is to be caked it
must be harder than for tub sugar, or to
stir off dry. Keep saleratus and all other
drugs out of your sugar, if you desire a
2urc maple taste and a wholesome arti
cle. When the season is through gather your
utensils, aud acald aud scrub every one
perfectly clean, if you wish to continue
making good sugar in the future. In this
order tho ov'aporoting pans are excepted,
sBich should be put away in a dry placo
with the glazed coating on them, whioli is
t3o best protection from rust.
FARMERS PRODUCE WEALTH.
We are not disposed to underrate the im
jartance of other callings, but in the ac
tual production of coitur.o 'ities, the farm
er confessedly ranks liichest. Ho comes
the nearest to boing a creator of wealth.
Compare, for a moment, the nature and
result of other pursu'ts. with those of the
Snsbandman. Take tho manufacturer.
Ee does but change the form of materials
already produced to his hand. He adds.

convenience, and in so doing is a public

commerce produces nothing, atlth noth

merce may be between individuals or ua
iions, yet the result is the tame; it U only
& barter of equivalents an exciuuge of

Something moro than this can be af
firmed of agriculture. It positively adds
oonietliiug to the stock of commodities.
Tho crops gathered from a. thousand hills
were not here last ypiinj; ; the nation is
2ositively richer by. io much. Or, rather,
hut remains ever, after the cost of pro
duction is taken cut, is so much uddod to
the common stock of wealth. Yot let not
tlte farmer jiiit on any unseemly airs.
Ho could accomplish little without the
aid and sympathy of other calling, and
his products would be of little value with
out thein. The eye cannot say to the
hand, I have no need of thee. Eaolt fra

of the other; their interests are common.
