We And tho following in the Country deathman, of tho 17th ult., from a oor rrspondont, in reply to tho inquiry of an other correspondent, upon tho cultivation f Ohicory an article, su a substitute for cofToc, at this timo boitig rnuoh inquired about. The writer, however, not only flives the mode of cuituro but also th way to prepare it for use. My oxprrioncc is confined to raising a foTv' bushels annually in tho pardon for our own uso. Chicory belongs to the family of Com posite, ot compound flowers, and has milky juico like the dandelion. It pro duces its seeds the second year, yet tho root ia perennial, and even fragmeuts of it livoand grow. Tho root is whito, shaped like a carrot, but does not grow as large and has many branches or fibres. The flower stalks are about four feet high, branched with abundant foilago and nu merous largo bluo flowers. It i principally cultivated in Germany, and used either alone or with other mate rials, as a substitute for coffee. W im port large quantities of it every year, and it is raised to a considerable extent for market by German farmers on Long Island. Wo were informed by a coffee burner in New York, that one farmer in 1861 raised fifty acres, for which crop when prepared for market he received eight thousand dollars. Theprico for the dried root in Nw York, the past year has been eight cents per pound or even higher. Tho seed may bo obtained at the prin cipal seed storos. It should bo sown in drills liko oarrots, and receive similar culture. Tho soil should be light and of easy tillage, and the manure well ferment cd and finely pulverised' The roots may be dug in October, the tops furnishing food for osttlo, though fed in excessivo quan tity to milch cows, they are said to injure tho quantity of tho milk. Wash tho root clean, slico in thin pieces, dry in the sun or in a moderate ovon, and brown and grind the same as coffoc. It is strongor than the puro cof fee in equal quantities, gives a good color to the decoction, but does not settle quite as clear as tho genuine article It is an ingredient in all tho burnt and gronud coffee sold in market. The flavor is agree ablo to most persons, and used as a partial substitute for the Java it does very well Wt recently treated our friends with a dish of coffee made of chicory, rye, and whaat bran stirred up with molases and browned like the other ingredients. It was pronounced very good, and thoy were surprised to learn that it contaiaed not a particle of coffee. The only objection we can find against its cuituro as a farm crop. is that when oneo sown it is exceedingly difficulty to got it out of tho land, and it becomes a weed. Yet it is esteemed abroad as a forags plant, and is readily eaten by cattla either green or dry. The root is very solid and does uot shrink very badly in drying, so that a rod square will furnish an abundant supply tor a family for a year. T S. G. KILLING CANADA THISTLE. Boil three lbs. of potatoes, mash them well, and add slowly some good broth, uuffioient for the tureen. Let these boil together, then add soruo spinaoh, a little parsley, lemon, thyme, and ssge, all chopped very lino. Boil togethor tivo minutes; pepper aud salt to taste. Just beforo taking it off the fire to servo, add two well boaten eggs. CHAPPED HANDS.
