I, Fanner's Department. THE APPLE. Wo alsvajte fuel pained to witness a de caying apple orchard j and, unfortunate- ly, Btiuh sights aro very froduont in Penn sylvania. It is a rare sight to see a well laden apple tree in southern Pcnnsylva nia, muolf less an orchard in full hearing, It was not wont to ho so, nor arc wc ahlo to explain why, (or a number of years pastj llio applo crop of our State lias. With a few exceptions, been an al most entire failure. Wo shall, possibly, somo of those days arrive at tho cause or causes of these failures, and be able to apply tho proper remedy. Until that auspicious day arrives let us livo in hopes, and, in tho meantime, one and all go to work with a hearty good will to ascortain where the root of the cvilis to be found. In our estimation, tho applo is the king of fruits. It has no particular sen son. It is the fruit of all seasons. The strawberry, cherry, raspberry, peach, and indeed, almost all other fruits, aro so perishable in their character, that we aro able to enjoy any particular ono of them for a few weeks only. Not so with the apple. From early June to early June wc are blessed with this most valuable of fruits. And then, to what a variety of uses it is susceptible of applicalion 1 Like the darkey's rabbit, it is "good for stews, good for Iry, good for roast, good forebcrything." It id healthful for all ; and what is equally important, may, with proper care, be grown in such abun dance as to bo brought within the easy reach of all classes. Let us hope and pray that wc shall soon have thrifty, fruit bearing apple orchards again. Here, in conclusion, what Dr. Hall says of this dcligntful fruit : ''There is scarcely any article of vege table food more widely useful, and more universally loved than the apple. Why every farmer in the nation has not an applo orchard, whore the trees will grow at all, is one of the mysteries. Let every family lay in from. two to ten or more barrels, and it will be to them the most economical investments in the whole angiToT culinaries . "A raw, mellow apple is digested in an liour and a half, while boiled cabbage .require five hours. The most healthful deserts which can be placed on the table, is a baked apple. If taken freely at breakfast, with coarse bread and butter, without meat or flesh of any kind, it has an admirablcelleci on the general system, often removing constipation, correcting acidities, and cooling off lebrile condi tions, moro effectually than the most ap proved medicines. "If families could be inducud to sub. tliluto the apple, sound, ripe, and lus cious, for the pios, and cakes, candies, and other sweetmeats with which their children are too often indiscreetly stuffed, there would be a diminution in the sum total of doctors' bills in a single year, sufficient to lay in a stock of this delici ous fruit for a whole season's use." Farmer $ Gardener. TREAT YOUR HOUSES GENTLY. After witnessing one ofPmf. Rarey's horse. taming exhibitions at the Academy of Music last fall, wo could not repress the thought that a general acquaintance by horse-keepers with his system, would be productive of advantageous results, incalaulable in amount. Let every horse kecper read tho following, from sonic re marks made by Prof. Rarey, and apply them to. practice : "Almost every wrong act the horse commits is from missmanagement, fear, or excitement ; one harsh word will so excite a nervous horse as to increase his pulse ten beats in a minute. When wc remember that wo aro dealing with dumb brutes, and reflect how difficult it must bo for them to understand our motions, bigns, and language, wc should never get out of patience with them becanse they do not understand us, or wonder at their doing things wrong. With all our intellects, if wo were placed in a horso's situation, it would bo difficult for us to understand tho driving of some foreigner, of foreign ways, and foreign language. Wc should always recollect that our ways and language aro just as foreign and un known to the horse as any language in tho world is to us, and should try to practiso what wo could understand were wo a horse, endeavoring by moro simple means to work on his understanding, rather than on tho different parts of his body," Fanner Gardener. ArrLE Puddino. Lino a basin with a crust proparcd as (or biscuit ; paro, core, and quarter, as many sour apples as will till tho basin ; sprinkle somo allspice over them, a little sugar, and add a half cup of water. Covor with a crust, and Hteam one and a half hours, Servo with eicain and sugar. Exckllijnt Cooking. Ono cup of cream, two ouns of susar, two ceai, half cup of butter, two tfspooiil'iils cream nrer, out of soda, iiutincg for scasonim,' four ' uflk'iuit to roll out. ILLUMINATION in ORANGEVILLE3.
