THE 1IEST VINEGAR IN 24 HOURS.
The following from the Scientific Jlmer
term, which is no doubt just as stated, is
commended to the attention of all families
who desire good vinegar. The direction
here given place its manufacture within
the easy reach of all, for the process is as
simple as it can bo.
The whole phylosophy ol the manu
facture of vinegar is included in the word
oxidation, tho alcohol contained in cider,
beer or wine, combining with the oxygen
of the atmosphere ; becomes ascetic acid,
which in a diluted state is vinegar.
The methods usually pusucd in the
ilntnestic manufacture of this article are,

improvement. The conversion Of ClUer
into good vinegar, by exposure to the air
in casks, requirss weeks and even months
to accomplish; because, only n small
surface is exposed at one lime to the oxy
dizing action of the atmosphere.
By exposing a larger surface of the
liquor tc the atmosphere, oxydation takes
place with corresponding rapidity, and
the process may be complete in twenty
four to forty-eight hours.
The method of accomplishing this
rap-d acetificdtion, which has long been
known to scientific men and manufactu
rers, may be pursued without difficulty in
private houses, as follows : Take a clean
flour barrel, and bore auger holes ull
around the sides, and in the bottom ; set
it over a fiat tub or open cask, and fill
it light with beech shavings which have
been soaked in vinegar. On top of this
barrel, which is open, lay two strips of
wood, and resting on these, a pail filled
with cider, beer or tho like- Procure
twelve or fifteen lengths of cotton wicking,
about thirty inches long; which, after
dipping in the liquid, arrange round the
sides of the pail at regular intervals, so
that one end of each will be hanging in
the cider and the other hanging down
outside, and below the bottom of the pail.
By means of these wicks the pail will
gradually be emptied of its contents,which
trickling over the shavings, will be expo
sed to the air, absorb oxygen, and finally
be received in the tub beneath, liy re
turning the liquor into the pail above,aud
suffering this trickling process to be re
peated two or three times, a splendid
vinefrar will be obtained. The whole
o
secret of tho process lies in the mechan
ical increase of surface accomplished by
the shavings.
PRESERVING FRUIT.
There is nothing so badly needed
among fruit-raisers as a certain method of
preserving their fruit. Some people are
very sucessful in their efforts, while oth
ers, the great majority, totally fail to save
their apples and pears, especially the
latter, for any lengthened period. Grain,
bran, chaff, meal, shavings, sawdust, &o.,
have all been used with more or less sa
tisfactory results. Latterly land plaster
has been introduced, and is spoken of
very favorably, and we have no doubt
justly. Its nature would seem to point
it out as well adapted to this purpose,
when the fruit is packed in barrels or
other vessels, and soparated well bj
plaster. On farms, where plaster is an
nually applied to tho grass, corn &c., it is
only necessary to purchase it a few
months in advance, as it will keep with
out deterioration any length oi timo. It
is said that apples can bo thus preserved
until May in perfect condition and flavor.
Barreling-up tightly and hurrying in
the earth, we have no question, is one ol
the very best processes. We .have
known it to be eminently sucessful.
Barreling and sinking under water is also
said to answer the purpose. With choice
pears this would well ropay tho trouble

The following recipe for preserving
eider, was tested hat (all by a fricnd.and
found to be all that is claimed for it.
"When the cider in the barrel is in a lively
fermentation, add as much white sugar
as will be equal to a quarter or three
quarters of a pound to each gallon of
