Stir until it is intimately mixed, and theu pour the emulsion into the liquid. Agitate the contents of the cask thoroughly for a few minutes, then let it rest that tlm cider may settle. Fermentation will bo arrested, at once, and will not be resumed. I It may bo bottled in the course of a few weeks, or it may bo allowed to remain in tlio cask antl used on draught. If bottled I it will become a sparkling cider, better tban wbat is called cbampagno wino.
