You must manage to have left over a lit
tle of tho mixture, perhaps a quart will
answer, for tho purpose of filling np the
vessel three or four times a day, as it
gradually loses in the quantity by the pro
cess of ejection at the bungholo, and cvap

up the cask before the fermoutatiou has en
tirely ceased, but after the most uoleut
stages of it have passed by. This can be
ascertained by placing tho ear to the bung-
hole, and listening to tho singing of the eff

at rest until tho February or March fol
lowing, when, if it is perfeotly fine and
transparent, it may be drawn off and bot
tled. If it is not fine, it may bo made so
by adding to every gallon of the" liquor i
ounce sulphate of lime. Draw a quart or
so of the liquor and dissolve the sulphate,
and return the s auie to the cask, and mix
thoroughly by stirring and shaking. In
the eourbo of ono or two inoniha it will be
come perfectly fine and bright. When,
however, everything works favorably no
.fining is rrquircd.
After the foregoing recipt wo have suc
ceeded in producing a wino much approved
and admired by all who have partaken ol
it; the only objection was iu being a little
too sweet, but this will, in a measure, wear
off by age.

may bo mixed with meal and honey, or
other substance that will form a kiod of
jelly, placed upon a small wooden blade
of a shingle, and thrust into the back part
of his mouth, when ho will very easily
swallow it."
