HUNGARIAN GRASS. This may bo sown from the middle of May to tho middle of Juno. If sown early it will givo two good cuttings. On deep, rich, mellow soil, tho crop of hay will bo heavy, and if the seed aro allowed to ripen, it is an exhausting crop Thoso who want early as well us abundent food to feed, cither green or dry, will find that this will answer well, and iu tho ocaicity or shortness of tho hay crop, it will provo an amplo substitute. GOOD CORN DREAD. Ono quart of corn meal, ono pint of wheat flour, two eggs and a little salt,with bour buttermilk bufiicicut to make a very stiff batter. Mis thoroughly, and then add one tcaspoonsul of Eoda dissolved in n very littlo hot water. Stir this in and pour into wcll-greascd pans, sufficient to be ono and a half or two inches thick when cooked. Place in a hot oven, and bako until done, say half an hour, nnd carry to.tho tablo hot. CAUSE OF SMUT. Tho blight called smut is a fuugus or parasitio plant, tho minute seeds of which lodgo upon various grains, germinate, and appropriate tho fubstanco of tho kernel. To prevent it, soak the seed eight or ten hours in brino strong onough to float an egg ; drain it well, and shovel it over with fresh slaked lime, until each kernel is will coated. Of course it should bo town with in a day or two after preparing it. LIMA DEANS. Let tho soil bo light, warm and rich. Mako tho hills about four fect apart. Stick poles about ten feet long in tho hills beforo planting tho seeds, so as to avoid disturb ing tho plant. Bury four or six beans about an inch deep around each polo, and if they miss on account of cold weather, or for any other reason, sow again. Three plants to each hill will bo enough. PUMPKINS. This is a useful article of food for milch cows and hogs in tho fall. It is a com mon practice to plant anionc tho crowing corn. Apart from the draft they mako up on tho corn supplies, this method involves a good deal of trouble in collecting and bringing to tho feeding ground. A better plan is to plant a half aero or more, as you may deem advisable, near whero you mean to feed them. Manure amply in tho hill and plant ten fect apart. APPLE RUSSE. Make some apple sauce, very sweot ; shread somo slices of bread generously with buttor on both sides ; lino a pudding dish with theso slices, (sides and bottom), then pour in your apple sauce, and bako until tho bread and butter is nicely brown ed. When dono it should turn out of tho pudding-dish all standing, but if you are preparing it for company, it is almost sure to turn out ktr-slump I GINGER DEER. Put two gallcns of cold water into a pot upon the firo, add to it two ounces of good ginger bruised, and two pounds of white or brown sugar, let all this come to the boih and eontinuo boiling for about half an hour. Then skim the liquor and pour it into a jar or tub, along with ono bliccd lemon, and a half an ounce of cream of tartar. When nearly cold, put in a tea cupful of yeast, to work. Tho beer is now utado ; and after it has worked for two days, strain it, and bottlo it for use. Tk down tho corks firmly. BAR LEY FOR HE NS. Thero is no grain so well suited as food for hens.
