    AGRICULTURAL.
HOW TO MOW.

not, but let us hint a word or two to your
sons, or to some young men who havo not
such skillful fathers to instruct them. Wo
want them to learn this art aright, and
t'icy will novcr forget it.
ThN is ono of tho most fatiguing oper
atiom of farming, and tho more so, be
cause it has to bo douo in very warm
weather. Any hints to lighten tho labor
will ho very useful. In tho first place,
fieii, ri ;o early, and begin before sunrise.
IJy doing so, and having your scythe
sharpened and in proper order the night
before, you may' get a half a day's work
done by nine o'clock. Tho coolness of the
morning air, and tho dow on the grass,
will both help along tho labor. At nine
o clock, jou may retire to the house, or to
borne shudy treo, and rest yourself for
several hours, whilo your slow neighbor is
sweating through tho mid-day, and per
haps hurting himself by over work and by
Liking down large draughts of cold water
to allay his thirst. Between two and three
o'clock you may begin work again, re
freshed and vigorous, and may labor till
sjnsct with little fatigue.
Ity all means keep your scythe in good '
order constantly. Let it bo adapted to the
mrfacu of tho ground to be mowed. If
that is level and freo from obstructions,
tho Bcytho may bo long and almost
ttraijiht, and it will work easy. If the
ground is broken, or covered with stones
or low stumps, the scythe must be short
and crooked.
While tho snath should not bo too hea
vy, neither should it bo so light as to

also, never let it become looso from the
blade, as this will causo it to catch upon
every obstruction, and rcquiro a great
watu of strength to mako it cut. Many
young' mowers, in their haste to get over
a certain piece of ground, often worry
thcui'ulvcs by this little neglect.
It U very ploasant to mow in company,
but young and inexperienced mowers
t-hould bo careful how they pit themselves
agains tho brawney arms of old .and

sun, and tho cattle suffer yet more. The

vere check of this kind will bo felt, too,
throughout tho season, for much of tho
pasture may bo " Summer killed," and the
lull flow ot milk can hardly ho regained.
Thh may bo guarded against by putting
iu a small plot of corn, sorghum, millet or
othor suitable crop for cutting and feeding
green. An acre of corn sown now, will
vei y soon yield sufficient to give great re
lief to short pasture. It is not necessary
to citable tho cows j cut a good supply for
them, and feed night and morning before
they leave tho yardj.thoy will eat it with
u lelish, and make ample returns in the
milk pans and churn. Evon if the threat
cii'id drouth should not como, and abun
dance of grass should grow, the soiling
crop should not bo lost. Cut at the prop
er season, and properly cured, it will not
O'jinu amiss next Winter.
Y. usa Cons Omelet. To a dozen
Mrs of fine young Indian corn allow five
egg-s ; boil tho corn a quarter of an hour,
mi l then, with a largo grater, grato it
down with tho cob j beat the eggs very ,
light, and then stir gradually tho grated i
com into tho pan of eggs, add a small
saltspoon of salt and a very little cayenne; j
put into a hot frying pan equal quantities
of lard and frch butter, and stir them well
together over tho fire, when thoy boil, put (
iu tho mixturo thick, and fry it, afterwards
browning tho top with a red hot shovel
or a salamander ; transfer it, when done 1
to a heated dish, but do not fold it over.
It will bo found excellent. This is a good
way of using boiled corn that has been
kit from Iho preceding day.
Lemon Tartlets. The- juieo of two
lemons and tbo rinds grated ; clean tho
gratur with bread only ; using sufficient '
uruuiba to tako oil tlicleinon peel ; boat all
ugetuer with two eggs, half a pound of
butter. This is sufficient for twelvo tart-
lcti, ana will bo fouud very excellent. 1
