Agricultural Items. THE GRAPE CROP. Last year the-grape crop was near ly a failure in the East; this year success has been so marked, that just now they will bring , but ten cents per pound in the Philadelphia mar ket. This lownesi of price is no cri terion of the real value of the crop: When things are tolerably plenty, there are many afraid there will be a "glut," and rush to sell at.any price. These, added to those -who must sell to supply immediate necessities, al- Ways overstock a market for the time being. ThiS of course reacts in favor of those who hold on, and who raise pied fruit. There is no doubt grapes Will bring ,tiVenty to twenty-five cents per poundbefore October and November is over, But we did not take up our pen to discuss prices, but to note why grapes, have done. better than last year. Many are the e:planations offered ; but the real reason .is, that the soil can scarcely be too dry for success fill grape culture. • In the best vine districts hillsides are most in favor; on "fiat land they have to underf3ram expensively, or be satisfied with greater risks. In our own localities we know how muckbetter the grapes do in toWns than elsewhere, which is- chiefly,-on account of the excellent drainage' so many cellars afford. Wherever the soil is flat, the grape should be groqin on hillocks raised. above the surface, unless naturally well drained-. For all this the grape likes to be near water. It glories in nothing more than to be ow:a Very dry bank, and yet near enough to have the points of a portion of its fibres always in the water.. Last year was very wet—the roots wereinjured —hence the failure ; this year it was dryer, and hence the . success. How I MAKE BUTTEII.---A writer in the Rural American give his meth od of making butter, and although it is intended to be packed for trans portation it is none the less'applicable ibr,pound-buttes intended for home market. •1 may as well say, I : have -,been working in.a.daily for nearly three score years ;. fifteen years -of that; time in Orange Co., N. Y. and twel• years in Wisconsin...;-- -My mode Of making butter is this: --Have pails, pans, churn,.tray;;anA ladle well washed, scalded and- dried before using them. Set the . milk in temperature where it will get thick in from 30 to 40. hours, then either churn the milk, or take the cream off and churn it. Milk should never be permitted to stand until it begins to whey, as that will impair both quan tity and quality.. If crearrc.or milk is too cold, put in the churn warm water; if -too warm put in paid water. When-the butter is properly gath: ered, put it in a tray, and put on cold water, and work with ladel moder ately. Pour off the water, and con tinue the process until the water looks quite Clear. Then salt with good Ashton salt, working it through the butter evenly and pressing out the water or milk. Set it in a cool place; let it stand - 24 .hours, and work again and pack. =:==l FARMING AS A CALLING.--A writer in the Boston Cultivator, in speaking of the nobility of farming, and after quotine.kkzm as a farmer goes on justly to say: "The long line of Pa triarchs honored this calling. To KEEP TomxioEs.----Tamatoes may be kept almost any length of time and come out almost . good and fresh as when first picked by preserving in pyre cider vinegar, di luted with water. One gill of vine gar and two of water. Pick when ripe but not very soft, leave the stems on and do not break the skin. Put into weed or stone and put the liqui. on them cold. After you get through putting them in, place some thing upon them to keep them under the liqUid, and take out as you may wish to use them. Can use them as you would tomatoes fresh from the vines. It will n 0 4.; fail you if your vinegar is pure and diluted according to directions". Try it Plough man. QUINCES PRESENVED TOLE.- Pare and put them into a saucepan, with the parings at the top ; then fill it with hard water; cover it close; set it over a gentle fire till they turn reddish ; let them stand till cold ; put them into a clear, thick syrup; boil them for a few Minutes ; set them on one side till quite cold; boil them again in the same manner ; the next day boil them until they look clear; if the syrup is not thick enough, boil it more; when cold, put brandied paper over them. The quinces may be halved o 1 quartered. =I CORN GRIDDLE CAKES.—SpId at night half the quantity of .meal you are going to use, mix the other with cold water, haring it the consistency of thick batter ; add a little salt and set it to rise ;It will need no yeast. In the morning the cakes will be light and crisp.. I== .11cFmNs.—Mix a quart of wheat flour, with a pint and a half of milk, half a teacup of yeast, a couple of beaten eggs, a teaspoonful of salt; and a couple of tablesPoonsful of luke warm melted butter. Set the batter in a warm place to - rise. When light, butter• your muffin cups, turn in the mixture and bake muffins to a light brown. Fnlisu White sugar, lemon juice,' and borax,. rub- them well together, and put . into glass phials.
