Digestion. Digestion is chiefly per

Pepsin and Rennet.—Pepsin is the chief
element, or great digestinn . b principle of the
Gastric Juice. It is found in great abun
dance in the sold parts of the human sto
mach after death, and sometimes causes the
stomach to digest itself, or eat itself up. It
is also found in the stomach of animals. as
the ox, calf,.&c. It is the material used by
farmers in making cheese, called Rennet,
the effect of which has long been the spe
cial wonder of the dairy. The curdling of
milt is the first process of digestion. Rn

mach of a calf will curdle nearly one thou
sand times its own weight of milk. Baron
Liebig states that, "One part of Pepsin
dissolved in sixty thousand ions of water,
