Pepsin and Rennet.—Pepsin is the chief
element, or great digestinn b principle of the
Gastric Juice. It is found in great abun

the ox, calf, &c. •It is the material used by
farmers.in making cheese, called Rennet,
the effect of which has long been the spe
cial wonder of the dairy. The curdling of

Liebig states that, "One part of Pepsin

his celebrated work on A nimarChemistry,

Professor Dunnlison of Philadelphia, in
his great work m Human Physiology, de
votes more than fifty pages to an examina
tion of this subject. His experiments with
Dr. Beaumont, on the Gastric Juice, ob
tained from the living human stomach ' and
from animals are well known. "In all ca
ses," "lie says"' "digestion occurred as per- •
fectly in the artificial as in the natural di
gestions."
