pounded with a view to produce bread of a far better
quality, and in mach less time, than by any other pro

is lighter, more digestible and nuitzitioas; has an agrees.
ble, natural taste ; is less liable to sour ; will retain its
moisture longer than by any other process, and the
whole preparation for the oven need not exceed ten
minutes.
.
It is valuable because It is not perishable, and may be
tendered available in places and at times when yeast Is
not.within reach, as at sea. In all climates and under
all circumstances, it may be adopted, thus obviating all
difficulty of procuring yeast or other farms t, which is
frequently of an inferior quality, ret fleeing the bread
more or less unwholesome.
It is also valuable es regards economy, as it has been
ascertained that a saving is effected in the flour of not
few than 10 percent. In the common procees much of
the saccharine of the flour is lost by being converted'
into carbonic acid gas, or spirit, and the waste is in
curred solely for the purpose of genoratiog gas to raise
the dough. By using Concentrated Leaven this waste is
avoided, and the gas obtained in a manner equally effi
cacious. Fermentation, as has been stated, destroys a
part of the flour or meal, end, in consequence, a barrel of
flour weighing 196 IDs,, which, by the common method,
ordinarily makes about 250 His of bread, gives by this
process 290 As , thin effecting the very important saving
ot - 16 per cent. in the quantity of flour. By conformity to
the directions on each package, any person capable of
ordinary attention may conduct the process, and the re
cult will Invariably be highly satisfactory.

pct. of yeast In dlstending dough, and thereby rendering
e fit for making bread. This article is skillfully com
founded, from perfectly pure material. It raises the
dough without consuming the sugar or any other prinei
pie in the flour, perfectly; and the same weight et flour
will produce more sweet, palatable bread than can be
obtained through yeast; while for cakes and pastry it is
invaluable, as it saves all risk, and much time of the
pastry cook.

made by the manufacturers, and proves this compound
worthy of public approval and extended use.

DIRECTIONS
BRRAKFAM AND TiA Boca—Two or three teaspoonsful
of Leavt a. (according to the quality of the Hour,) to one
quart of flour; mix thoroughly by passing two or three
times through a sieve ; rub in a piece of butter half the
size or RD egg, and make the paste with cold milk or
water, (milk is preferable.) barely stiff enough to perMit
rolling out.. Much kneading should be avoided. Cat In.
to desired ferm, and place Immediately in a hot oven and
bake quickly.
LOA, Masay..,Tbe same proportion's of Leaven and
Maur sifted together as above; omit the butter, abd make
the paste stiff enough to knead into a loaf, and bake im
mediately in a slow oven.
GRAHAM Bimen.—Three teaspoonful of Leaven to ono
quart of wheat meal, sifted together ; add one gill of mo
lessors and two eggs ; make the paste thin with milk and
bake In a slow oven.
,Satin Beam—Three teaspoonsful of Leaven to one
pint of flour, and one pint of corn meal, allwell sifted to
gether; add two eggs and about a gill of molasses; make
the paste thin with milk, and bake slowly.
BUCKWHEAT CAMBS.—FIour and milk sufficient to make
MG quart of batter ;add one egg, then three teaspoonsful
of Leaven; beat to a froth, and cook quick.
Donetuis.—Sitt together one quer tof flour and two tea
spoonsful of Leaven; rub hi a piece of butter half as large
as an egg; mix with cold milk or water, and boil ten
minutes.
Manna Bums Crxx.—,Sift together two large cups
or 110 Ur and two teaspoonsful of Leaven; put in hall' a cup
of butter and a cup and a half of sugar ; mix with tee
milk or water to a stiff batter, add spiceto suit the,conits
and bake immediately.
CHGENNATI SPONGE Cass —Two cups of white sugar
beaten with the yolks of six eggs—the whites of six eggs
beaten to a froth; then beat all together ; add three cups
of sifted flour, one cup of water, and three teaspoonsful
of Leaven; flavor with two teaspoonful of essence of le
mon, and bake in a quick oven.
Jonetaa.—Sift together one quart of flour and three
teaspoonsitil of Leaven ; rub in one teacupful of butter.
add a cup , and a half of white sugar, and spice to suit the
taste; mix stiff enough to roll out, and bake quick.
Jtuainorreimr.—One quart of flour and three teaspoons
fel of Leaven silted together ; add a cup of butter, one
pound of currants, two cups of white sugar,
and one tea
spoonful of cinnamon ; mix with cold milk to a stiff bat
ter, and bake In a slow oven. -
Coast Caint—Oue pint each of flour and Indian' meal,
and three teaspoonsful of Leaven, well sifted togaher ;
add one gill of molasses and two eggs ; mix thin with
milk, and bake in a slow oven.
CUP Gana—Five cups of flour and three teaspoonsful
of Leaven, sifted together;
add one cup of butter, two of
sugar, and two eggs, all wen beat together ; then add a
oup of currants, and spice to soft the taste. Bake about
half en hour. '• .
LAMB' Qrs.—Three quarters of a pound of flour and
four teespoonaftd of Leaven sifted together; one pound of
sugar and six ounces of butter beaten to a cream ; the
tittles of eight eggs well beaten and the Juice of one le.
mon; mix with milk.
Wigwam Cum.—Five cups of Sour, three teaspoensful
of Leaven, three cops of sugar, one of butter, one of
milk, and two eggs ; fruit and spice to the taste. Bake
about half an hour.
Packed in Cases of 1,2, 4, and Six Dozen Cans.
