It le valuable because It is not perishable, and may be
rendered available in places and at times when yeast is
not within reach, as at sea. In all climates and under
all-ohronmetanoes, it-May be adopted,.thtmobviating all
difficulty of procuring yeast or ' other fertileet, which is
frequently of an Inferior finality, rel. daring the bread
more or less unwholesome.
It is also valuable as regards economy, as it has been
ascertained that a Raving is effected in the Simi of not
less than 113 per cent. In the common procees much of
the saccharine of the flour is lost: by being converted
into carbonic acid gee, or spirit, and the Waste is in,
curled solely for the purpose of "generating gaß to raise
tbe dough. By using Cancentraind...lneren thia waste is
avoided, and the - gas obtained in a manner equally effi
cacious. Fermentation, as bat been stated, • destroys a
part of the flour or meal, and, in consequence, aberrel of
flour weighing 190 lbs., which, by the common method, •
ordinarily makes about 250' lbs of bread, gives by tbis
process Willa , thus effecting the very important saving
of 16 per cent. in the quantity of flOtir. By conftormity to
the directions on each - package, any Percon-capable of
ordinary attention may'conduct the prOcesCand the re
sult will invariably be highly satisfactory.

quart of flour; mix thoroughly by pasting two or three
times through a sieve ; rub in a piece of butteshalf the

rolling out. Much kneading should be avoided. Cut in;

quart of wheat meal, sifted together ; add one gill of me

pint of flour, and one pint of corn meal, all well sifted to-',
gether; add two eggs and about a gill of molasaea; make
the pastethin with milk - , and bake slowly.
BOCEWEIRAT Cetus . -Your and milk sufficient to make
one quart of batter ; add ene egg, then three teaapoonsful
of Leaven; beat to a froth, and cook quick.
Innerms.--Sitt together one quar tof flour and two tea•
spoonful of Leaven; rub in a piece of butter half as large
as an egg; mix with cold milk or water, and boil ten.
Own= Brum Ctaxn.--flift together two large cups
of flour and two teaspooneful °Mown; patio half a cup
of butter and a cop and a half of sugar ; mix with ten'
milk or water to's stiff batter, add spiced* suit the,ocipts
and bake immediately.
CENCINAAT/ Drones CM —Two cups of White sugar
beaten with the yolks of six eggs—the whites of six edge
beaten to a froth; then beat all together ; add three caps
of sifted flour, one cup of water, and three teaspooneful
of Leavon; flavor With two teaspoonsibl of essence of
mon,and bake in a quick oven.
Jtionse.—Sift together one quart of flour and three
teaspoousild of I.eaven ,• rub in.one teacupful of batter,
add a cup and a half of white auger, and awe to suit,the
taste; mix stiff enough to roll tint, and bake quick.
Excnomemot—One quart of flour and Aimee teaspoons,.
fel of Leaven sifted together • add a Gap of ,butter, one
pound of currants, tiro cups of white sugar, and one tea,
spoonful of cinnamon ; mix with cold milk to a stiff bat,
ter, and bake in a Blow oven.
Coax Coot.--Ous pint each of flour and Indian meal,
and three teaspoonaful of Leaven, well Bitted icSulhOr
add one gill of molasses and two eggs ; mix thin with
milk, and bake in a slow oven. . •
CCP etne.—Flie coils of Sour and three teaspoomifai
of Leaven, sifted together; add one cup of nutter, two of
sugar, and two eggs, aIL W all beat together ; then add
cup of currants, and spice to suit the taste. Bake about
half an hour.
Lunn , Cana.--Tbree quarters of a pound of floor and
four teaapoonstlll of Leaven sifted together; one poimd of
sugar and six ounces Of tutforbea,ten to it lirnant I the
whiles of eight eggs well beaten, and the juice of one
mon; mix with milk. •
WILOSTCR Caen, . —Five cups of flour, three ternmeonsful
of Leaven, three cups of sugar, ono' of butter, one of
milk, and two eggs ; fruit and Spice to the taste. peke
about half an hour. ,
