CONCENTRATED LEAVEN is the re
sult of careful chemical research. All its ingredi
ents are prepared In the highest state of purity, and com
pounded with a view to produce bread of a far better
quality, and in mach•less time, than by any other pro
cess ; and by the manufacturers submit it, with entire
confidence, to the judgment of discriminating house
keepers, bakers, &c.
Bread of all kinds made by Wog Concentrated Leaven
is tighter more digestible and nultritious; has an agrees.
ble manna taste ; is less liable to sour ; will retain its
moisture longer than by any other process, and the
whole preparation for the oven need not exceed ten
minutes.

rendered available in places and at times when yawl is
not within reach, an at sea. In all climates and under
all circumstances, it may be adopted, thus Obviating all
difficulty of procuring yeast or other ferme:4, which Is

It is also 'valuable as regards economy, as It has been
ascertained that a saving is effected in the sour of not
less than 16 percent. In the common proceese much of
the saccharine of the flour is lost by being converted
Into carbonic acid gas, or spirit, and the waste is in
curred solely for the purpose of genorating gas to raise
the dough. By using Concentrated leaven this waste is
avoided, and the gas obtained In a manner equally effi
cacious. Fermentation, ss has been stated, destroys •
part of the flour or meal, and, in consequence, a barrel of
floor weighing 196 lbs., which, by the common method,
ordinarily makes about 260 IDs of bread, gives by tide
process 290 IDs , thus effecting the very irnr-wient ssetoc

ordinary may conduct the process, and the re

tur ed by Messrs. Edw. Chamberlin & Co., with reference
to its purity and efficiency of action in producing the ef
pc t of yeast in distending dough, and thereby rendering
e St for making bread. This article is skillfhlly com
f minded, from perfectly pure material. It raises the
dough without consuming the sugar or any other princi
ple in the tour, perfectly; and the same weight of Hour
will produce more sweet, palatable bread than can be
obtained through yeast; while for cakes and pantry it is
invaluable, as it saves all silk, and much time of the
pastry cook.
"The experiments made by me confirm the statements
made by the manufacturers, and proves this compound
worthy of public approval and extended use.

BRIUMABT inn Tat Bout.—Two or three leaspoonsfUl
of Leaven. (according to the quality of the flour,) to one
quart of Sour; mix thoroughly by passing two or three
times through a sieve ; rbb in a piece of butter half the
Rise of an egg, and make the paste with cold milk or
water, (milk te preferable.) barely stiff enough to permit
rolling out. Much kneading should be avoided. Cot In
to desired form, and place immediately in a hot oven and
bake quickly.
Lew( Bstan.—The same proportions of Leaven and
flour sifted together as above; omit the butter, and make
the paste stiff enough to knead into a loaf, and bake im
mediately in a slow oven.
Guassis Bitzth.—Three teaspoonful of Leaven to one
quart of wheat meal, sifted together ; add one gill of mo
lasses and two eggs ; make the paste thin with milk and
bake in a slow oven.
BROWN Bmaso.—Three teaspoonsfol of Leaven to one
pint of flour, and one pint of corn meal, all well sifted to
saber; add two eggs and about a gill of molasses; make
the paste thin with milk, and bake slowly.
BIJOIWRIAT CAlM.—Flour and milk sufficient to make
one quart of batter ;add ens egg, then three teesPeenefel
of Leaven ; beat to a froth, and' cook quick.
DIMPLIGS.--taft together one quer tof ; tiour and two tea-
spoonful of Leaven; rub in a piece of butter half as large
as an egg ; Mit with cold milk or water, and boll ten
minutes.
Ctnaxamt Bram Caxi.--Slll together two largo cope
of flour and two teaspoonsfui of Leaven; putts' half a cup
of butter and a cup and a half of sugar ; mix with tea
milk or water to a stiff batter, add spinet° suit the,ocipta
and bake Immediately.
CLNONNAn &Mtn Casa —Two cups of white sugar
beaten with the yolks of al eggs—the whites or six eggs
beaten to a froth ; then beat all togetheradd three cups
of sifted tour, one own of water, and th ree teaspoonsfal
of Leaven; Bever with two teaspoonsfill of essence of le
mon, and bake In a quick oven,
Jew.—Sift together lone quart of flour and three
teaspoonsflil of Leaven ; rub in one tea-cupful of butter.
add a cup and a half awhile sugar, and spice to suit the
taste; mix stiff enough to roll out, and bake quick.

eaven silted together ; add a cap of butter, one
pound of currants, twissupit of white sugar, and one tea

ter, and bake in a slow oven.
CORN Guns.—Oue pint each of. flour and Indian meal,
and three teaspoonsflil of Liaven, well sifted togedier ;
add one gill of molasses and two. eggs ; mix thin with
milk, and bake In a
. elow oven.
CCP Caux.—llie cops 01 dour and three iettspoousful
of Leaven, sifted together; add One cnp of batter, two of
sugar, and two eggs, all well beat together then add •
cop of currants, and spice to suit the taste. Bake about
half an boor.
Lemke' Cash.—Three quarters of a pound of flour and
four teaspoonsftil of Leaven sifted together; one pound of
sugar and six ounces of butter beaten to a cream ; the
whites of elght eggs well beaten, and tho juice of oce 1e
moo; mlx with milk.
Casa.—Floe cups of flour, three tesspoonsTal
of Leaven, three cops of sugar, one or butter, one of
milk, and two eggs ; fruit and spice to the taste. Bake
about half an hour.
