Proirklom of Shatomia Chemical work.
No. SS INDIA STREIT, Boston.
CONCENTRATED LEAVEN is the re
%),/ suit or woeful chemical research. All its ingredi
ents Re prepared in the highest state of purity and com
pounded with a view to produce bread of a fir better
quality, and in much less time, than by any other pro
cam ; and by the manufactinera Submit it, withentire
confidence, to the judgment of diserimbuthig home
keepers, bakers, dtc.
Bread - of all kinds made by using Ooncentrated Leaven
is lighter, more digestible and nultritioue; bas an agrcea.
ble
th
natural taste ,• bleu liable to sour ; will retain its
moisture longer 'an by any other process, and the
whole preparation for the oven need not exceed ten
minutes.
It is valuable because it is not perishable, and may be
rendered available in places and at times when yeast is ,
not within reach, as at sea. In all climates and under
all circumstances, it may be adopted, thus obviating all
ditylottity of precuring.yeast or other ferniest, which is
frequently - 0U an quality, ret daring . the bread
more oa's'is iffitelfoleeeme. •
It is , also valuable as regards economy, as it has been
as/Attained that a tavlngla effected in the flour of not
lees than le per cent. In the common procce.9= much of
the saccharine of the flour is lost by being converted
into Carbonic acid gas, or spirit, and the waste is in
curred solely for the purpose Of generating gas to raise
the dough. fly using Concentrated Leaven this waste Is
avoided, and the gas obtained in a manner equally effi
cacious. Fermentation, as has been slated, destroys a
part of the flour or meal, sod, in consequence, a barrel of
floor weighing 196 Iha.,-which, by the common method,
ordinarily makes about 260 The of bread, gives by thin
process 290 lbs , thus effecting the very important saving
of 16 per cent. In the quantity of flour. By conformity to
the direction,' on each package, any person, capable of
ordinary attention may conduct the process, and the re
nal will invariably be highly satisfactory.

have analysed the Concentrated Leaven, manufac

to its purity and efficiency of action In producing the ef
pat of yeast In distending dough, and thereby rendering
At for making bread. This article is skillfully con
founded, from perfectly pure material. it raises the
dough without consuming the sugar or any other princi
ple in the Sour, perfectly; and the same weight of flour
will produce more sweet, palatable bread than can be
obtained through yeast; while for takes and pastry It is
Invaluable, as It saves all risk, and much ti of the
pastry cook. .

made by the manufacturers, and proves this compound
worthy of publie'aPproval and extended use.
