CONCENTRATED LEAVEN is the re
suit of careful chemical research. All its ingredi
ents are prepared in the highest spite of purity and com
pounded with a view to produce bread of a t z ar better
quality, and in much less time, than by any other pro.
cess ; and by the manufacturers submit it, with entire
confidence, to the judgment of discriminating ;house
keepers, bakers, fru.
Bread of alt kin's made by using Concentrated Leaven
is lighter, more digestible and nuitritious; bas an agreea.
ble natural taste ; is less liable to sour ; will retain Its
moisture longer than by any other process, and. the
whole preparation for the oven need not exceed ten
minutes.

It is valuable because it is not perishable, and may be
rendered available in places and at times when yeast is
not within reach, as at sea. In all climates and under
all circumstances, it may be adopted, thus obviating all
oifficulty of procuring yeast or other forme t, whish is
frequently of an inferior quality, re: Bering the bread
more or less unwholesome.
It is also valuable as regards economy, as it has been
aseertainedlhat a saving - 13' effected in - the flour of not
less than 16 per cent. In the common procees much of
the saccharine of the flour is lost by being converted
into carbonic acid gas, or spirit, and the wastels in
curred solely for the purpose of generating gas to raise
the dough. By using Concentrated Leaven this Waste
avoided, and the gas obtained in a manner equally, effi
cacious. Fermentation. as has been stated, destroys a
part of the flour or meal; end, in consequence, a be:nett&
flour weighing 196 lbs., which, by the common method,
ordinarily makes about 250 IDs of bread. gives by this
process 280 IDs , thus effecting the very important saving'
of le per cent. in the quantity of flour. By conformity. le
the direetions on each package, any person capable 'of '
ordinary attention may conduct the process, and the re-'
sult will Invariably be highly satlsfactork .

BROWN Basso.—Throe teaspoousful of Leaven to one
pint of flour, and one pint of cord meal, all well sifted to
. gether ; add two eggs and about a gill of molasses; snake:
the paste thin with milk, and bake slowly.
BUCKWHEAT ,CAKES.—FIour and milk sufficient to ,make,
one quatt of better; add ene egg, then three teasiloonsfuld
of Leaven; beat to a froth, and cook quick.
Duisruos.—sift together one quart of flour and two tea
apoonslul of Leaven; rob in a piece of butter as large
as an egg;.mix with cold milk or water, and boil ten
Minutes.
CRAMBER Smarr Cum—Sift together two large cups
of flour and two teaspoonaful of Leaven; put in half a cup
of butter and a cup and a hailer sugar; mii with colcl
anilk or water to a stiff batter, add spice to suit the taste,.
and bake immediately.
CINCINNATI BrONGIII CANS —Two cups of white sugar
beaten with the polka of six eggs—the whites of six eggs
beaten to a froth; then peat all together, ; add three cups.
of sifted flout', one cup of water, and three teaspoonful'
of Leaven; flavor with two teaspoonsfal of essence of le
mon, and bake in a quick oven.
JunlELlca —Sift together one quart of flour. and three
teaspoonsful of Leaven ; rub in one tea-cupful oflautter,
add a cup and a half of white sugar, and spice to suit the
taste; mix still' enough to roll out, and bake quick.
ELECTIONCAKN.—One quart &flour and three teaspoons
ful at Leaven Bitted together ; add a cup of butter, one
pound of currants,,two cups 'o f white sugar, and one tea
spoonlul 01 cinnamon ;:mix 'with' cold milk to a stiff bat
ter, and bake in a slow oven. .
CORN Csks.—Cue pint each of flour aniilndlan meal,
and three teaspoonsful of Leaven, well sifted toge.her ;
add one gill of molasses and two eggs ; mix thin with
milk, and bake in a slow oven. •
Cl7l. CAKE.—FiYO Car* of flour and three teaspoonsful
of Leaven, sifted together; add one cup of britter,,two of
sugar, and two eggs, all well beat together ; then•add a
cup of currants, and spice to suit the taste. Bakeabout
half an hour..
Lentz& Qum—Three quarters of a pound of flour and
four teaspoonsful of Leaven sifted together; one pound of
sugar and six ounces of butter beaten to a cream ; the"
whites of eight eggs well beaten, and the of one le
mon; mix with milk.
IVEsszau: Casze. ,,, Five cups of flour, three teaspoonsful
of leaven, three cups Of sugar, one of butter, one of
milk, and two eggs ; fruit and spice to the taste. Bake
about half an hour.

We observe that certain gentlemen are
contemplating the establishment, at Wash
ington City, of ra newspaper "organ" for
Mr. LlNcona's Administration. Such insti
tutions are not necessarily public nui
sances; but they have been conducted in
such a manner that the objections to them
are innumerable. It seems but fair that a
President should have a newspaper chan
nel through which he could communicate
with the public, and in whose columns he
could be defended against the unjust charg
es of his enemies. But "organ-grinding,"
at the Federal Capital, is a modern inven
tion of corrupt politicians. The man who
turns the crank is obliged to furnish just
such music as will suit his employers; lying
ought to be one of his natural faculties, for
a man to acquire, even by long practice,
the ability to multiply falsehoods with a
rapidity corresponding with the demand in
an Administration organ. When the ma
chine gets out of order, he has only to oil
the wheels with a Post-office advertise
ment, open the throttle•valve, and stand
clear of the cogs—all will be bright and
beautiful as a summer's morning. • The Or
gan serves a variety of noble and beneficent
purposes, not understood by, all the people
of the land.
It has a corps of Jenkinses, who, by vir
tue of their profession, secure admission
to the "hops" at the hotels, the levees of
the foreign Ministers, &c., and describe
the species of gloves, vests, pants, boots,
dresses, shawls and jewlery worn by the
elite.- The Jenkinses have wide noses, and
are, so accustomed to musk, bear's oil,vand
varioushorrible ointments required by fash
ionable society, that they can tell by the
very odor of en audience whether it is gen
teel or vulgar. These enterprising young
men are not only endowed with amazing
nasal power; they pounce on all the fleeced
illoes with which high life is. necessarily
adorned, and many a scandal like the Sick
les affair would sleep in oblivion but for
these modest youngsters. They know just
who accompanies everybody's wife from
parties, and whether everything is just as
it ought to be, and can relate with Parisian
scrupulousness . the attitudes of a Minister's
attache and a New York belle through all
the 'fearful mazes and affectionate etril3races
of Le. 4 Landers. The private journals of
these sub-editors are printed in the, "Or
grin," and become part of the public records
of the country. They are of immense valve,
as they will serve to show to future ages
the , high state of morals 'characterizing
VPaehington City in the middle of the nine
teenth century.

But the great object of the projectors of
a newspaper organ is to secure the control
of the public plunder. The ostensible edi
tor is , generally a mere sand-bag bag, so
situated as to protect from the public eye
the real sappers and miners of the national
treasury. He is expected to bear all the
odium, and meet all the danger, while
others do the work. When he finds the
fat growing thin on his ribs and the butch
er-bills accumulating, he has only to walk
to the "Lobby," and threaten to turn
State's evidence, and his hungry pockets
at once protruded with richness.
The Organ is simply au entering wedge
to the public money; its circulation is al
ways limited, its editorials are always par
tisan, and it is nothinc , more nor less than
an imposition upon nothing
'public. If Mr.
LINCOLN desires to keep his Soul unspotted,
he will do well to use a pair of heavy
boots on the first jobbers that shall attempt
to constitute themselves his body-guard

We remember once to have been scoffed
at by a musical friend for asserting that of
all national airs, Yankee Doodle was the
most in - spirit:kg, and that as a composition
it deserved to take rank among the highest
of such melodies, having nothing.ridiculous
about it except its unfortunate name. It is
some satisfaction to see how enthusiasti
cally this opinion is endorsed in-a volume
of travels, entitled "A Run through Eu
rope," by Mr. Benedict, a popular lawyer .
of New York—and, by the way, the -au
thor of one of the most agreeable and in
structive books of the kind that has_ been
issued this season. Mr. Benedict says:
"I remember when it was fashionable to
laugh at Yankee Doodle -as a :vulgar air,
written to make fun of, our ,extempore sol
diers of the olden time—how it was writ
ten by Dr. Bhackburg, and given to our
soldiers as a celebrated Eurorean air, to
ridicule their fondness for European fash
ions. /Notwithstanding its simplicity, our
troops have kept time to its measures on
all their fields of gloryyz--and it is quite im
possible, to imagine an air more perfectly
fitted to the national tone of such a people
as ours. -As'we have grown stronger and
greater—as the stars and stripes, have
floated higher and higher over more, and
more fields of triumph—eo Yankee Doodle
has risen in the. scale of Merit, and I be
lieve it is at last discovered to, be _ not a
new, nor an American air;nor a burlesque,
nor a musical drollery, 'hat 'it is founded
