GOLD CAKE. —Two caps flour; two
thirds cup butter ; two-thirds cup of sweet
milk; yellow of six eggs ; one whole

A red squirrel was recently caught in the
barn ot D. C. Brown, ofßeriin, which in
less than three months' time carried two
bushels of corn up a flight of stairs and
end safely stowed it away for future use.
t3T The morning is uot the time to feed
poultry. Let them do the best they can
for themselves in the early part of the day,
but just before tbey go to roost fill their
ctops with pudding. Active digestion can
goon in the crop and gizzard of a chicken
while it is asleep.
COLD CREAM. —Three ounces of oil of
almond half an ounce of spermaceti, and a
quarter of an ounce of white wax. These
must be melted over the fire and poured in
to a warm glass or marble mortar, when
as much orange flower or rose water as the
mixture will take up should be put in by
degrees.
BROWN BREAD. —One quart of corn
meal, wet thoroughly with boiling water;
then add one quart of lukewarm water,one
qnart of raw corn-meal, oneqaart of Gra
ham flour, one tablespoonful of salt, fonr
tablespoonsful good hop yeast, one teacup
ful of molasses; mix thoroughly ; when
light, bake two hours, in a moderately heat
ed oven.
LEMON PlE(easily madc)p—Two lemons;
squeeze out the juice, and chop the lemon
fine (rake out'he seeds); three cups of
water,'three cups of sugar, one egg, two
♦thirds of a cup of flour ; beat the egg well
with half a cup of water and the flour ;
then stir lemons, juice, and all together ;
this will fill three pies,
RHEUMATISM. —The Chelsea Pensioner's
Recipe—-Honey two pounds, clarified bv
a slow fire down to one ponnd: flonr of
sulphur, two ounces: cream of tartar, one
ounce; Jamaica ginger, powdered half an
ounce; one nutmeg grated; gum guiaeum.
powdered, one draehm. Mix all these in
gredients well. Dose--two teaspoonsfull
twice a day in a tumbler of hot water.
To BAKE HAMS.—The usual mode of
preparing hams for the table is by boiling.
Thev are far richer, if oaked as follows:
Soak the ham in clean water for an hour
then wipe it dry. and spread it all over with
thin batter, lay it in A deep dish, with sticks
under it to keep it from the grease,
fully done, remove the skin and the batter
which has crusted on the flesh side, and
set it away to cool in the open air.
ORCHARD SITES. Those who are about
forming new orcbaids should study well
tho location, remembering that an elevation
of only a few feet often renders a location
free from frost, and thus insures the crop
of fruit. Again it is not only that the
hills are more exempt from frost than val
leys, but that the increased temperature of
the valleys in summer causes a more rapid
and succulent growth, less capable of en
during uninjured the severity of winter.
SPREADING MANURE IN WINTER. —The
Boston Cultivator gives examples which
serve to establish the position we hold on
this subject. The editor mentions the
case of a farmer, who formerly drew ont
his manure and left it in small heaps. It
froze hard and could not be spread till it
thawed in spring; and being intended as
top-dressing for meadows, killed the grass
under the heap. He now draws and ppreads
from the load, which be finds a great im
provement. Another breaks up the ma
nure into a fine powder by bushing it,
wbich increases its valne.
The objection that the manure, or manure
water, will wash off. we have not found
valid. A meadow with a steep side hill
was dressed with manure in strips in win
ter, and when rain occurred with the tbaw,
we could not discover that the liquid ma
nure had run five feet down the hill, nor
given any increased growth of the grass
five feet off, as it Lad done near the spread
belt.
MILKING A KICKING COW. —In reply to
your correspondent who inquires for some
way to milk a kicking cow without trying
her in some of the various ways that Lave
been recommended 1 will give a little of
my experience in that line, premising that
no one ought to undertake the job just be
fore a shower when he has a load of hay in
the field that he is anxious to get into the
barn. To milk a good experience kicker
without tying, requires time and patience
I once bought a cow of a man who said DO
one could milk her without tying her legs.
1 first cleared my stable as for a dancing
party, drove the cow in and shut it up as
dark as possible. With a milking stool
made on purpose, about two feet high, I
gently seated myself by her side. If she
was there when I was ready to commence
milking, she was not there long afterward.
But I followed her to where she was, hav
ing closed my lips firfhly against the first
harsh word. This process was repeated
until the cow was tired of ruoning away
•nd concluded to stand and be milked; after
whieb I could milk her in the yard. In the
course of the summer I was obliged to be
absent a week or tnore, and the milking
was done by another hand. In my return
I could not get within reach of my kicking
cow, and was obliged to give her another
dark-stable lesson, ami in the course of a
few weeks I could again sit down and milk
her in the yard i.s I did other cows. There
fore, though I believe that most kicking
cows can be milked without being tied, I
wish to add a a postscript—it is difficult 1
