How TO ROAST A TIG.—TO have it in
prime order it should be from four fir*-
weeks old, not older, aod should be killed
and dressed the day before roaating Make
a stuffiiDg of bread crumbs, dry, aud two
or three good onions chopped fine, and
about two tablespoonfuls of finely powder
ed sage, well seasoned with salt and pepper
Allow no water in the pan; bake whole in
a good oven, and rnb often with a little bag
of butter. When done, the fat should be
all poured from the pan. a little water
added to the brown gravy, boiled up, and
either poured over the pig or served in a
tureen. It should be served with hot plates
apple rauce, hot, and very nice oniou sauce
The onion sauce is made in tbe following
way, and is excellent with roast leg of mut •
ton, roast pork. Peel si* or seven good
sized onions, and boil in water. When
tender, drain and chop fine. Set it to boil
a little over a pint of milk—water will do
if you have no milk but it will require more
butter. Take a tablespoonfu! of flour, blend
it with a small piece of butter, and 6tir tbe
milk, when boiling, put in tbe onion aud
serve hot.
How TO MAES RAII.S DURABLE.—AI
most every one notices a difference in rails
used for fencing material. Timber left with
tbe bark on rots very much quicker than
that which is split and seasoned. Some
rails last but three or four years, and others
are good for fifteen or twenty. There is
a difference of course, in the woods*used for
this purpose. Birch poles are sometimes
worthless after a year's Ute, and chestnut
s very durable. Experiments 6how that
rails cut and split after midsmmer last
much longer than those prepared in winter
but summer is usually full .occupied with
tillage and harvest, and of necessity fenc
ing material must be prepared at a time
of more leisure. If cat early in winter,
(and none should be cut late) have tin
logs split immediately, and the rails piled
where the sun and wind can have free
access to them. It is a good plan to draw
them to where they are to be nsed, as the
ground is now frozen. Peel poles too smal
for splitting.
STRAY GRAINS FOR ( HICKENS— Under
this tittle the Gardener's Magazine^ English
fives the following sensible hints: "Feed
your poultry on raw onions chopped fine
mixed with other food, about twice a we<k.
It is better than a dozen cures for chicken
cholera. Fowls exposed to dampness are
apt to be troubled with catarrah, which will
run to croup, if not attended to. Red pep
per, mixed with soft feed, several times
will remove the cold. Pulverized char
coal, given occasionally, is a preventive of
putrid affections, to which fowls are very
mbject. Setting hens can be cured by put
ting water io a vessel to the depth of one
inch, putting the heD into it and covering
the top of the vessel for about twenty-four
bonrs. The vessel should be deep enough
to allow the fowls to stand up. This is the
best remedy I ever tried. Pulverized Chalk
admininistered with soft feed* will cure
diarrhoea. This disorder is caused by want
of variety in the food. Garlic fed once or
twice a week is excellent for colds "
ORCHARD SITKA.—Those who are about
farming new orchard should stndy well the
location remembering that an elevation of
only a few feet often renders a location free
from frost, and|thns insures the crop of fruit.
Again, it is not only that the bills are more
exempt from frost than valleys in summer
cause a more rapid and saccuaent growth,
less capable of enduriDg uninjured the sev
erity ot winter.
ABOUT HORSES.— From the Rochester
Union we take tbe following:
Horses as a general thing get too much
licking and too little feed. If a man loses
his hat while driving bis horse, he licks
the horse, to pay for it. If he runs into
another wagon through his own careless
ness. be licks his horse to make it all right
If he slips or stumbles he gets licked for
it—if be dose anything he gets licked, and
if he don't do anything he gets the same.
A great many bones know ' a sight" more
than their drivers, and if they could change
places witk them society at large would be
the gainers, and so would the horses.
RANCID BUTTER— To a pint of water
add thirty drops (about half a tesspoonful)
of liquid ehloride of lime. Wash in this
two and a half pounds of rancid butter.
When every particle of the butter has
come in contact with tbe water, let it stand
an honr or two; then wash it well in pure
water. Tbe butter is tbeu left without any
odor, and has the sweetness of fresh butter
These preparations of lime have nothing
injurious io them.

changes, the editor of which says:
"We forthwith obtained some of the
moat rancid butter, and bad enough for any
stomach that bad more sensibility than a
wagon-wheeL We doctered it as per recipe
and when placed on the table along with
new, good bntter, very able judges could
not distinguish which was the new bntter.
Here is a fact worth a year's subscription
to a paper."
