The earning of c rn in families #o gener eratly fails that vre cannot recommend the trial. The next lieat thing t > canned c m is that which is properly dried. The first eeaential is good corn, and the next i 6 to dry it carefully before it get too old. Mrs. M. L. Gage, of Ros County, Ohio, communi* cites the following •en-tble ideas about pre paring it: 'ltis a wonder t! at so tew should have anything by field c -rn for table use ; at <1 for drying there is a still greater contra bet ween the common fi Id com a r d the gar den varieties. I bsve been used fur yeats to drying corn. lioil the cteen ears a minute or two just to harden the milk, then en* from the cob and spread on a ciuth in the sun foi two days, taking it in at mgbi ; it will then keep anywhere. H hen cooked, it is better to s >ak it a few hours, and b<*d m the same wa er. In cold wea'her a!! that i wanted fur a week or two may he wet. I* cooks quicker and tast e better. A I'ttle milk and flour boiled in is aliu s! a" pood a cream. I have not even op drying c rr>, but for two year* past I have jut -"ins down it. salt, which giTu-s another variety, and i n, rt quickly prepared. A' fir-t I had d fficußv in freshing it, and then i' was couparativeiy tasteless, but n*>w I br.-i! the corn m one vi ler a ni'nnte or two, turn the water iff ald a few sliced po'atr**, boil un'il ther are di nt then drain off the watir, add a few sliced po tatoes, boil uutil they are done, drain off tin water, and add or butter. We 'ho k this preparation tastes more Ike s. ;n )in-r Corn than the dried corn does. In salting. I cut the green corn without boiling, and par*k it, alternating, one pir.t of corn an<l a emit handful of salt. JFben the ve-se! is abou full, put of a ever that will fit down to the corn, and places small we'ght on it, as ii must be kept under the brine which it uuke frorn its own ju ce. 1 have f r "he pas* tw years, been canning gri-eii corn with tuniatrx s I use abcut t.ce fo*urth part corn, cm.king the the two together. 1 have never heard of but one cae where green c -rr canned by itseP did not spoil, but corn and tomatoes canned together is a perfect success."— American Agriculturist. TOMAKOFS. — This crop i* becoming of con siderable commercial imj-ot tance. S'atiMics of the Cann'ng esfsMishinents ar >und our Eastern cities would surpri-e many <,f our reader*, in the immense number of can* of this vegetable put tip. To induce a ra; i I growth and full beating, manyjof our large*! growers are employing B.inch's Haw Bone Phosphate. and the result* are highly sati* factory. This is particularly the care with several large Canning estabhshtnenr* located in the vicimty of New Y rk. The u*oal plan of applying is, to furnih each plant with a small handful —mixed well wi'h the earth —at transplanting time. After the plant is started, and while cultivating, anoth er small handful may he scat', red a* a top dressing around each stalk. The very great advantage in size of fruit and smoothness of surface surely follows thus application. To BOTTLE PEACHES.— After seeing tha' your bottles or can, with their proper hd aro ready, season your bottles, by pouring into each one a pint of water in which yon can bear to hold your hand any length of time, but which should bo quite warm - Place upon the fire a nice clean porcelain or brass kettle in which is about a pint of water —sweeten it and place in the peaches which are prepared. We always have ours. As soon as boiling, rmp'y a bottle of warm water and fill with peaches, pushing the topmost well under the juice, and put < n the lid im mediately ; put more peaches into thekc l tie. and more sugar and wa'er as required. We always keep a kettle of bo-line water ready at the back of the fire Country Gentle man. To PICKLE P EACH EE.— Wipe thorn well, and stick into each one, three or four cloves, and place in a crock, utid prepare a pickle as follows : To one peck of peaches allow three lbs. of sugar and nearly one quart cf vinegar. Scald and pour over three sccces sivc mornings, Tut HORSE. —Sponging horse* with a wash made by steeping walnut leave* in wa'< r, t said to prove an effectual remedy against the annoyance of flies, gnats, &c. A* the wash will in no way i jure t'-e hair or skin of the animal, the remedy can be tried with safe'y To KILL BRAKES. — The only way is to cut them often just as they are shooting up. If you delay too long 'ill they have grown to their full size, this cutting will not he eff c tual, but a frequent cutting while young w>!l kill them out in a year or two. Ploughing and draining would destroy them, hut many of our rough pas'ures are not to be ploughed without great com and trouble. On the whole, the frequent cutting while young is the most practicable way. A Scotchman having hired himself to s farmer, had a cheese set before hitn, that he might help himself. After some time the master said to him : "Sandy, you take a long time to break fast !" "In troth, master," said Sandy, "a cheee o this size is na sac so<>n eaten as ye may think." Ai.w*va STWSHINR SOMEWHERE. The fun is always shining ; the flowers are al ways blooming J the bud* are always sing ing ; the golden grain '• always waving in tbM wHiked wotld aouiewberw.
