DON'T EAT RAW HAM.
The lesson to be drawn from tho recent
cases of trichinosis Springfield is summed up
in just these four words. While authorities
differ in many other things with regard to
this new disease, all agree that if ham ard
por% are thoroughly cooked there is no dan
ger in eating either. Sometimes the disease
has been communicated by eating imperfect
ly cured "dried beef," but here, too, all dan
ger disappears when the beef is well cooked.
These and other facts of special interest to
the medical profession arc admirably set
forth in a communication to the New Y'ork
Medical Record by Dr. Rustinc, of Marion,
Ind., who has treated several cases of the
disease. Dr. Rusfinw sums up the case a*
follows :
It That sjmptoms indicating the presence
of young trichina: in the tissues are observed
as early or earlier than the fourth day after
the ingestion of the trichinous meat.
2. That cysts are formed as early as the
twenty-Rfth day.
3. That, other things being equal, the se
verity of the symptoms is in direct propor
tion to the amount of trichinous meat eaten.
4. That an active cathartic, given while
the Worms are stil! within the intestinal ca
nal, is effectual to a certain degree in causing
their expulsion and mitigating the severity
of the disease,
5. That youth affords no, immunity do
stroys ths effects of the disease.
6 That salting and smoking do not des
troy the vitality of the parasite.
7. That thorough cooking accomplishes the
object.
TAKE CARE OF THE MOWING AND
REAPING MACHINES.
I
The Harvest season is now over and by
the time the present number of the journal
of the Farmer reeehea our readere, the at
tention of farmers will begin to be drawn to
fall plowing for wheat, rye, Ac. The mow.
ing and reaping machines have done their
work, and will not be again needed for a
twelve month. See that they are properly
cared for now. Thit is the time to make
needed repairs. Fat mere have more leisure
in August than during any other month of
the year. Improve a few of these leisure
hours by seeing that your mowing and reap
ing machine* are thoroughly eleaned up.—
The grease on the journals is now soft, and
can be readily removed. See that it is all
taken off. By next spring it will harden and
be ten-fold more difficult io remove than now-
The knives are now bright and clean, keep
them so by applying to thein a moderate
coat of oil or tallow, This done, rust will be
prevented, and when they are wanted for
next year's service they will be found in good
condition. When the machine* have been
cleaned give them, on the parte they require
it, a coat of paint. It will cost but a triflu
aud can be done in an hour. When dry, do
not stand them out in the meadow but put
them under shelter. Do the same with horse
rake and hay tenders. Nothing pays a farm
er better than careful attention to his farm
implements and machines when not in actual
use. Treated in the manner we have sug
gested, they will last twice as Ion? as when
thrown Into fence corners, or jet up against
tho side of the barn .. wagon shed.—JOUR
NAL.
TO MAKE SUMMER DRINKS. —To make root
beer, take a quantity of sarsaparilla roots and
sassafras bark and some hops and boil till the
strength is extracted. To three gallons of
the liquor, after it is strained, add one quart
of molasses and a cup of yeast. After stand
ing is a warm place eight or ten hour, straiu
again and bottle. It will be fit fur u6 the
following day.
For ginger beer fake one pint of molasses
and two spoonsful of ginger, put into a pail
to be half filled with bulling water ; when
well stirred together, fill the pail wtth cold
water leaving room for one pint of yeast,
which must not be put in till lukewarm
Place it on a warm hearth for the eight, and
bottle it in the morning.
For spruce beer, take three pounds of su
gar, four gallons of water, one ounce of gin
ger, a little lemon peal, or essence of lemon,
and a little essence cf spruce to give it aMa
rcr.
Stir all together, warm it a trifle ; add a
cupful of good yeast. When fermeuted, bot>
tie ap close.
Mead is msde by dissolving one* part of
honey io three of boiling water, flavoring ii
with spicea, aud adding a portion of ground
malt, and a piece of toast steeped in yeast,
the whole to lertnent,— GEßM AN
TOWV TELEGRAPH.
TOMATO CJTSI P.—Take ripe tomatoes (the
small red ones av© preferable) wash but not
skin them and thoroughly boil one h< ur,and
then put them through a hair seive, and then
put them through a bair seive, and to one
quart of juice add one tablespounful of cinna
mon, one of black pepper, half cayenne, half
of Dutmeg, one of good mustard, two thirds
teacupful of salt. Boil three hours longer ;
bottle hot and seal up. This catsup will
keep for years, and not require "shaking be
fore using." A porcelain kettle ahould be
used.
trsr Cows sometimes get a surfeit of
grass, especially in wet warm weather, when
the grass is succulent and rich. This feed
distends the bowels uncomfortably. An arm
ful of dry hay once a day, will serve to ab
sorb tome of this moisture, and benefit the
cow in many respects.
MOUNTAIN CAKE. —One cup of sugar, two
eggs, half cop hotter, half cup of milk or
water, two cups flour, one (etspoonful cream
tartar, half teaapoouful aoda, nutmeg.
