HOW TO MAKE SOME CAKES.
BAH.VtEit.ES.
One cap of molasses, two cups of cream or
milk, one-third pt and of butter, one and a
quarter pound brown sugar, a quarter pound
chocolate. Boil bard from forty to fifty min
utes, stirring all the time to prevent burning;
then pour into battered pans.
SPONGE CAKE.
Five egg*, one-quarter pound fl-mr, he-vy
weight, one half pound sugar light weight,ricd
and juice of one lemon. First beat the whites
and yolks separately, then beat well together
after which beat in the sugar, and stir :D the
flour lightly over the top ; add the lemon
and bake in a quick oven from fifteen to
twenty minutes.
POOR MAN'S CAKE.
One lemon, two cnp of sugar, two eggs
one quarter pound of butter, one cup of milk,
teaspoon of soda dissolved iq the m>lk, three
cups of tlour, one teaspoon of cream tartar
mixed with the flour. Beat the sugar, butter
and eggß well together ; mix next the flour
and lemon without beating. The oven must
be moderately hot.
GINGER POUND CAKE.
One teacup of brown sugar, one teacup of
butter, one of cream, two of molasses, four
tggs, two tablespoon of cinnamon, two nut
megs, one teaspoon of pearl ash, seven tea
cups of flour. This is belter baked in quite
small tins.
PLAIN SUGAR CAKE -
Three pounds of flour three fourths of but
ler, rub them together as for paste ; one and
a half pounds of sugar, half pint of milk, in
which dissolve the sugar, teaspoon of pearl
ash, three eggß, two nutmegs, teaspoon of
cinnamon.
COMPOSITION CAKE.
Three-fourths of a pound of butter, one and
a quarter pounds of sugar, five eggs, one pint
of milk, one glass of brandy,one glass of rose
water, teaspoon of pearlaßh, one and three
quarter pounds of flour, two pounds raisins
anl currants.
THE NEW MODE OF CUBING BEEF.
The editor of the Corpus Christi (Texas)
Advertiser gives an interesting account of
the new mode of curing beef by the process
of infiltration as witnessed at a packing es
tablishment in Texas. The editor says :
Per invitation of Mr. Turner, we were "in
at the death" of the first beef at the Nueces
packing establishment on Wednesday last.—
Quite a crowd of visitors, attracted by curi
osity were present to witness the not el op
eration of curing beef by infiltration.
A fine fat bullock had been selected, and
when we arrived the workmeD had alieady
performed the knock down operation. The
beef was upon his back, and a saw was cut
ting its way through the brisket, to enablt
theoperatoi to get at the heart, thin done.an
incision was then made in the r'gbi ventricle
of the heart, the carcass turned upon its side
and the blood allowed to escape. Then it
was again rolled upon its back, a small incis
ion made in the left ventricle of the heart and
and a small hoes pipe inserted. It may be
necessary to slate that to the pipe was at
tached a rubber hose, and by traei. g the hose
about ten feet in the direction of thb building
it terminated in a barrel of brine, boistert
there by means of a windlass The pipe
inserted full length, entering the j-i/uUr *< <n
and then secured by a stout tvrd. T brine
was turned on and the process of infiltration
commenced. The first incision on the right
ventricle of the heart wa6 closed by a damp.
We watched patiently to see the effect.—
Soon the carcass became stiff and rigid, and
cooled rapidly. Mr. Turner, by a dex'erous
and skillful operation, amputated about an
inch of the tail. Instead t Mood, brfne spir
ted out with force. A• 1 took a taste and
"acknowledged the corn." In ten minutes
the brine that had been through the veins
was as cool as when it came from the tank
Incisions were made to difii-rvot parts of the
carcass, and from each, jets of brine would
epirt to the distance of three our four feet.
The carcass was again rolled upon its side
the clamp taken off the incision on the right
ventricle, and out came the brine that bad
traveled, through every artery and vein
where blood circulate!. By continuing to
force in the brine, the blood was forced out,so
that in fifteen or tweoiy minutes the eacap
ing brine was but slightly colored with blood
By this time the carcass was cold and stiff,
ready to skin, cut up, pack and ship to any
part of the world.
TO KEEP GRAPES FRESH.
In the fall, when they are perfectly ripe,
they are taken from the vines ; when they
are free from anything like moisture, handled
carefully and packed in small kegs—nail kegs
are the kind generally used. Put a layer ol
green leaves, right off the vines,in the bottom
on these a layer of grapes, then leaves again
and grapes alternately, until the keg is full,
then finish off with leaves—Put in the head,
and your kegs are ready for what ? Why to
be bored in the ground. Dig a trench so as
to admit casks deep enough that they will
have about one foot or fifteen inches of soil
over them when covered. The ground sho'd
be packed moderately tight and a botrd laid
long tbe top before the ground is thrown in
Then throw some litter on the surface of the
ground over those which you wish to take up
duriDg the winter, to prevent the ground from
freezing ao hard aa to keep you from getting
them, One important thing must be observ*
ed that tbey be placed where there can be no
standing water about tbe kegs, or they will
suffer.
